Buy fresh dough {deli or a pizza place}, use ready made packaged crusts or get refrigerated dough from the grocery

My current favorite is this Pillsbury Thin Crust Pizza Crust

And pizza is great leftover…

The only drawback to pizza is that it tends to be loaded with fat and calories…

But when you make your own you can get great flavors and satisfaction with a fraction of the calories, and it’s the perfect place to pile on the veggies

It was only a matter of time before my favorite ingredients got together to make the perfect pizza for me,

Roasted Brussels sprouts, crispy bacon, and bleu cheese, piled on a crisp, thin alfredo sauced crust, with a sprinkling of Parmesan cheese

Heaven!

Bacon & Brussels Sprout Pizza

Prep Time 10 minutes
Cook Time 45 minutes
Course Appetizer, Main Course
Cuisine American, Italian

Ingredients
  

  • 1 can refrigerated pizza crust dough like Pillsbury thin crust
  • 1 cup+ light Alfredo sauce like Classico lite Asiago Romano
  • 24-30 Brussels sprouts washed, stems cut off and halved
  • 6-8 slices thick cut bacon
  • 3-4 oz bleu cheese
  • 2 oz shaved Parmesan cheese
  • olive oil
  • salt & pepper

Instructions
 

  • Place Brussels sprouts in between bacon slices on a parchment paper lined baking sheet. Drizzle sprouts lightly with olive oil and season them with salt and pepper. Bake at 400, 20-25 minutes until bacon is done and sprouts are beginning to char. Drain bacon well on paper towels and cut into 1 inch pieces
  • Bake crust according to package directions, removing when just done. It will brown further when returned to oven with toppings. Top with 1 cup alfredo sauce and spread into a thin layer. Add sprouts and bacon pieces. Sprinkle with bleu cheese and Parmesan. Drizzle with a little more alfredo sauce if desired. Return to oven for about 10 minutes, until cheese has melted and crust is golden. Cut into 8 or 12 large squares for serving, or mini squares for appetizers.

Notes

Can be made ahead. Refrigerate prepared pizza and bake right before serving. Leftovers reheat well in toaster or oven

This pizza isn’t hard to make, but it does require about 30 minutes to pre-bake the crust and roast the sprouts, but the bacon and sprouts can be cooked together and you can go do something else while they are cooking

Once the bacon and sprouts are done, it just takes minutes to layer on the toppings and return pizza to the oven for final baking.  You can even assemble the pizza early in the day or the night before and refrigerate it until baking

  2. Jenna, I’ve never seen the Pillsbury thin crust dough but it would be perfect for me! Last night I made a flatbread pizza with turkey sausage and green peppers and low salt cheese. It was delicious! I’ll be trying some of your recipes as we love pizza. There’s more to it than just red sauce and cheese! Linda

    • Thanks AnnMarie! My husband doesn’t really go for my crazy pizzas, so I make them when he’s out of town 🙂 There never used to be any Jennas and now there are tons! >
