May is a busy month all around and I didn’t get to cook as many things as I wanted to…Here’s what I did make from the May Paint Bucket
Brie Stuffed Artichokes combined with Grilled Veggie Flatbread and turned into
4 Cheese Spinach & Artichoke Pizza
Asian Peanut Coconut Dressing from Carlsbad Cravings was delicious on Asian Pasta Salad with Creamy Coconut Dressing
Wild Rice Salad with Corn, Blueberries, Almonds from Bon Appetit turned into Wild Rice Salad with Corn, Peas & Blueberries
Smorgastorta {Swedish sandwich cake} turned into a bacon rose topped
Chicken Tacos turned into Two Way Tacos with Roasted Tomato & Squash Salsa
Cheesy chicken tacos are topped with creamy guacamole and then the vegetable salsa in corn tortilla shells
BBQ Pork Tacos, with pulled pork, BBQ sauce and vegetable salsa in a flour tortilla
Lemon Pound Cake turned into Last Minute Lemon Loaf Cake
If I had to pick a favorite this month it would be the Two Way Tacos with Roasted Tomato & Squash Salsa and another recipe that wasn’t on my bucket list, Almond Danish and Buried Almond Danish Bake…

What a wonderrful surprise to find the oranage-pecan cookies on your June Paint Bucket Jenna! So many of your selections look absolutely tantalizing: the blackberry chicken spinach salad and the coconut shrimp-pineapple chili skewers have my attention! Top that with a peach scone??? Heaven!!
