Recipe Box, BBQ Pork & Corn Torta & Parmesan Roasted Cauliflower

Our favorite go to meal is pork butt, also known as Boston butt,  cooked on the grill.  It’s easy to prep, all it needs is a good seasoned rub patted all over it, then put it on the grill, low and slow, and go about your day

Make a torta by layering corn, green onions, pork, tortillas, BBQ sauce and a little cheese

A torta is a Spanish or Mexican version of a sandwich, using round flat tortillas rather than bread.  I adapted this recipe from  Cooking in Stilettos, Pulled Pork Torta

You can assemble it ahead of time, refrigerate and bake it later

Garnish with a sprinkle of cheese and green onions after baking, and cut it into wedges like a pie

It cooked right along with the torta

NOTE:  When you are cooking 2 dishes at the same time, compromise the temperature settings.  The torta which cooks at 350 and the roasted vegetables which cook at 400, both did fine at a compromise temperature of 375 degrees.  Rotate pans half way during cooking and make time adjustments nearing the end of cooking.  If one dish finishes before the other, remove from oven and hold it covered with foil until serving

BBQ Pork & Corn Torta

Prep Time 15 minutes
Cook Time 50 minutes
Course Main Course

Servings 6

Ingredients
  

  • 4 cups cooked pulled pork
  • 1-2 ears corn cooked and cut from the cob
  • 3-4 green onions chopped
  • 1 cup grated cheese cheddar or Mexican blend
  • 4 large flour tortillas
  • olive oil
  • BBQ sauce

Instructions
 

  • Grease a large round baking dish or line it with parchment {for easy torta removal after baking}.
  • Spread a layer of sauce on one tortilla and place it in dish.
  • Top with 1/2 of pork and drizzle with more sauce. Top with another tortilla.
  • Top second tortilla with 3/4 of the onions and corn and sprinkle with 2/3 cup cheese. Top this with another tortilla.
  • Place remaining pork on tortilla and drizzle with more sauce. Top with final tortilla and brush or spray top with olive oil. Cover and refrigerate before baking.
  • Preheat oven to 350 degrees. Bake torta, covered for 30 minutes.
  • Remove cover and continue to bake for 15-30 minutes, until torta is heated through. Garnish with reserved onions and cheese. Carefully lift torta out of dish and place on cutting board. Cut into wedges to serve.

Parmesan Roasted Cauliflower

Easy, healthy, tasty side dish
Prep Time 10 minutes
Cook Time 40 minutes
Course Appetizer, Side Dish
Cuisine American
Servings 4

Ingredients
  

  • 1 head cauliflower
  • 2 cloves garlic minced
  • 2-3 oz. Parmesan cheese
  • olive oil
  • salt & pepper

Instructions
 

  • Remove florets from base of cauliflower head, trim ends and slice.
  • Line a sheet pan with foil or parchment. Place sliced florets on pan in a pile.
  • Add seasonings and 1/2 of cheese. Drizzle liberally with olive oil and toss to distribute oil and seasonings. Spread out into an even layer.
  • Roast at 400 degrees for 30-40 minutes or until caramelized and golden. Sprinkle with remaining cheese and return to oven for 2 minutes to melt.
  • Serve immediately. Serves 3-4 depending on the size of your cauliflower head.

    This looks delicious! You have just given me an idea of what to do with some leftover roasted chicken. Roasted cauliflower is great isn’t it? I started doing it a few years ago when I saw it on Giada’s show one time. We had some a few nights ago, in fact.

    Jenna, We’ll have to try your torta! We make quesadillas using our pulled pork leftovers with some Monterey Jack cheese, red onion, jalapeno and bbq sauce. I love the addition of corn! Roasted cauliflower is the only way I like it…bring on the Parm!
