Holidays, Happy Labor Day & Psst, It’s Football Season!

My prayers to those affected by Hermine and the Pacific storms.  We were lucky and only had a couple of hours of rain from the outer bands on Thursday, and have been enjoying hot sunshine on the Gulf coast.  Fingers crossed hurricane season will be mild this year.

Top Dogs on a Roll aka Gourmet Smokies with Caramelized Onions, are a twist on ever favorite pigs in a blanket

Top Dogs on a Roll or Red & White Tidy Bites

Ingredients
  

  • 20 mini smokies
  • 20 small dinner rolls [Sister Shubert’s]
  • 1 large onion sliced
  • sweet hot mustard or mustard of choice
  • 1 T butter
  • 1 T olive oil

Instructions
 

  • Cook onion in butter and olive oil over medium low heat until caramelized, about 20 minutes.
  • Slice rolls in partially in half lengthwise, like a hot dog bun, not cutting all the way through, forming a pocket.
  • Spread mustard on the inside and top with a few caramelized onions and 1 smokie.
  • Place buns on a baking sheet and bake at 350 for 15-20 minutes until heated through.
  • Makes 20 mini dogs.

    You guys really go all out! Ray was totally in hog heaven yesterday and last night. I binge-watched another Aussie soap opera I have gotten hooked on. Just not a football girl. I could definitely get into some of that food, though!
