Recipe Box, Peanut Butter Fool

I am a fool for both peanut butter and this easy way to make “ice cream”

“Fool” or “Foole” is an English culinary term for dessert, traditionally berries buried in custard or whipped cream

The base is super easy, sweetened condensed milk and thawed Cool Whip or beaten heavy whipping cream

Now here’s the fun part, add anything you like!

I used mini peanut butter cookies, chocolate peanut butter cups, and peanut butter bites*

*I recently discovered these, they are a handy little snack- I’ll grab 3-4 to get me through the morning if I don’t have breakfast.  Look for them in the peanut butter section

Mix the milk and whipped cream together in a large bowl or directly into a freezer container

You can add the mini cookies and chocolate cups whole or cut them into smaller pieces for more even distribution and easier eating

I did cut the peanut butter balls into 1/4s

Cover the container and freeze for 4 hours before serving

PEANUT BUTTER FOOL

Prep Time 5 minutes
Freeze 4 hours
Course Dessert
Cuisine American
Servings 6

Ingredients
  

  • 1 can 14 oz sweetened condensed milk
  • 8 oz Cool Whip thawed OR 1 pint heavy whipping cream whipped
  • Mini peanut butter cookies broken into smaller pieces if desired
  • Mini chocolate peanut butter cups cut into smaller pieces if desired
  • Skippy Peanut Butter Bites cut into 1/4s

Instructions
 

  • Combine milk and whipped cream in large bowl or plastic container. Stir in remaining ingredients in any amount you desire. Cover and freeze for a minimum of 4 hours before serving. Keep frozen.

    How can I notice your pumpkin plates with peanut butter ice cream doo-dads on top? I love peanut butter so much I’ve started buying the giant double-jar pack at Costco. Crunchy of course.I don’t know of these peanut butter bites of which you speak. Must investigate and mix in ice cream right away.
