Take-out Tuesday, Alabama Comeback Bars

We had a ball last week with my brother-in-law and nephew, who surprised us with an impromptu visit, and flew in from Southern California to relax with us at the beach for a few days…

I wanted to make sure they were properly attired…

We had a lot of perfect weather plus a few pop up storms

They LOVED the rain and lightning because they never have thunderstorms, or rain for that matter

I knew they’d be easy house guests, so I didn’t fret too much about meals

At the last minute I decided to make a quick sweet in case they were so inclined

The first thing my BIL did when he walked in was help himself to 3!  He was inclined!

“Boy, you keeping making things like these, we’ll be coming back to Alabama often”

Ha! that was my plan 😊

I’ve learned that guests will grab a small bite over something that requires slicing or assembling

They will turn down a regular sized cupcake, “Oh, I couldn’t possibly eat all that…”

I figured I couldn’t go wrong with a layered bar cookie, with a crescent roll dough crust topped with bacon

Everything is held together with sweetened condensed milk

And baked to chewy sweet perfection

Lining the dish with parchment makes easy work of cooling, cutting, and clean up

Alabama Comeback Bars

Prep Time 5 minutes
Cook Time 25 minutes
Course Dessert, Snack
Cuisine American

Ingredients
  

  • 1 can crescent rolls or dough sheet
  • 1 can 14 oz sweetened condensed milk
  • 1 cup chocolate chips
  • 1 cup butterscotch chips
  • 6-8 strips of bacon cooked and cut into 1 inch pieces*
  • 2 cups crushed potato chips

Instructions
 

  • Spray a 9″ x 13″ baking dish with cooking oil spray. Line it with parchment paper. The spray will keep the parchment in place and the parchment will make it easy to lift the baked cookies out of the pan, as well as protecting the dish from leaks and spill overs.
  • Carefully unroll dough and place on parchment, pinching perforations to seal if necessary. Bake at 350 for 15 minutes or until cooked and golden. Top crust with an even layer of bacon pieces, then butterscotch, then potato chips, and ending with chocolate chips. Slowly pour milk overall. Bake at 350 degrees for 25 minutes, or until set and golden.
  • Cool cookies before cutting into bars or squares

Notes

*cook the bacon several days ahead of time if desired, place strips on parchment paper lined baking sheet and bake at 350 degrees 15-25 minutes until done. Drain well on paper towels, then wrap and refrigerate until use.
