Take-out Tuesday, Sugar Cookie Birthday Pie

NG, my son-in-law, is the nicest guy you will ever meet

frosted-cookie-pie

He also has a major sweet tooth

So for his birthday last week, I made him a giant sugar cookie pie

And topped it with chopped peanut butter cups

I was trying to make up for the fact that for Christmas we gave CC a storage bench and Charlie Brown a play table, but they both had to be put together, and the bench was missing instructions which made it extra fun…

Then a Home Depot gift card for his birthday, which I’m sure will be used for household projects…DD had him painting the hallway the day after Christmas!

This guy deserved a cookie!

This recipe is adapted from Betty Crocker, she said to mix it with a spoon,

I’m sorry Betty, that’s way too much work so I opted for a hand mixer, but next time it will go straight into the food processor or stand mixer

Mix sprinkles into the dough and pat in into a big cookie in a springform pan or a pie plate

I used a springform pan for ease of removal

Let cookie cool completely before icing and garnishing

You can use any kind of cookie dough, sprinkles, or icing flavor and toppings you like

Cut it in very small wedges or pieces because it’s obviously very rich!

He does deserve a cookie or two Jenna! I told my hubby when he retires he needs to go into the “some assembly required” business since he’s everyone’s Mr. Fix It 🙂

    P. S. Sending my condolences your way this morning after that nail biting game last night.

What a nice compliment for your son-in-law. I bet he thinks he got a pretty good deal, too! I’m betting the kids didn’t mind indulging in his sweet either.
