Recipe Box, Sausage Stuffed Pancakes

Ok, so I was going to wow you today with my BRILLIANT version of Lemon Poppy Seed Pancake Mini Muffins, puffins if you will…

You wouldn’t believe how awful these things were

Even lemon pie filling – desperate times –  couldn’t save them…

After several nibbles of the dry disappointing puffins, I gave them the toss…

It is going to be a long time before I eat another poppy seed  😝

Now here’s an ingredient you can depend on, sausage!

Maple syrup & butter….bye bye lemon pie!

Make your favorite batter from scratch or with a pancake mix

Brown the sausage, maple flavored is really good  😋

Remove and drain on paper towels, then add to the batter

Stir sausage down into the batter

Add butter to skillet

Start cooking the pancakes

Flip pancakes when the surface has bubbles all over

Serve with a pat of butter and real maple syrup

Next time I’m going to add blueberries too  🍇

Sausage Stuffed Pancakes

Course Breakfast, Brunch
Cuisine American
Servings 4

Ingredients
  

  • 2 cups pancake batter
  • 1/2 lb. maple breakfast sausage
  • butter
  • real maple syrup

Instructions
 

  • Prepare batter according to recipe or package directions.  
  • Brown sausage and stir into batter.  
  • Melt butter in skillet over medium heat and add batter in desired pancake size, small, medium or large.
  • Cook pancakes until bubbles form on the surface and then flip.  Cook pancakes for 1-2 minutes longer until golden.  Serve immediately with butter and real maple syrup.  Serves 3-4

    Looks yummy. But don’t give up on poppy seeds. Old fashioned poppy seed cake is my fave 😉. It’s the birthday cake my grandma made me every year. 🎉

  2. I am sitting here coffee in hand and thinking how good these would be right now. Thinking I may have to try these over the weekend for breakfast………..

    • We had these on New Year’s Day, but didn’t use all the batter. I stuck it covered in the fridge and cooked the rest for my grandsons 2 days later and they were just as good 😋

    Your sausage pancakes would make a good winter weeknight dinner too Jenna! I’m actually wishing we had some winter weather. I’m afraid with these teaser 70 degree temps everything is going to bud and then become frost nipped.

    Sausage in pancakes….now I do like the sound of that. I had to laugh over your failed muffins. I recently had that happen when gluten free blueberry muffins tasted like cornmeal.
