Lately I have been taking shortcuts, still making tempting dishes, but leaving  more time and energy for painting and crafting…

February is truly a short month and I have run out of days to post some of the great recipes from the February Bucket List

Here are a few random recipe ideas:

A recipe for carbonara with cauliflower caught my eye this month, but in an effort to lighten things up, I just roasted cauliflower with some broccoli for color, and finished it up with a drizzle of Beer Cheese Sauce

Not exactly diet food, but with the cheesy sauce you will never miss the pasta

And then there’s this cheesecake with a crust made from cake mix!

I went the Red Velvet route for Valentine’s Day, but again, endless possibilities!

I wish you could have smelled this baking, it was enticing…

How about a luscious lemon cheesecake with a lemon cake mix crust

or a mint chocolate cheesecake with a devils food cake mix crust-

Swirl in food coloring, melted chocolate, caramel or anything you can think of, for a lovely marbled effect

Red Velvet Cheesecake

Ingredients
  

Crust

  • 1 box Red Velvet cake mix like Duncan Hines Super Moist
  • 1/2 cup butter softened

Cheesecake filling

  • 1/4 cup reserved cake mix
  • 3, 8 oz. packages cream cheese softened
  • 6 oz. semi sweet chocolate chips melted and cooled slightly
  • 1/2 sour cream
  • 3/4 cup sugar
  • 3 eggs
  • 1-2 T red gel food color optional
  • optional garnishes:

Garnishes

  • whipped cream
  • chocolate chips
  • chocolate truffles chopped
  • Preheat oven to 300 degrees

Instructions
 

  • Reserve 1/4 of cake mix for filling
  • Wrap the outside and bottom of 10 inch springform pan.  Spray the inside with cooking spray or baking spray.  Mix dry cake mix with soft butter with an electric mixer on low speed.  Press into the bottom and 1 1/2 inches up sides of pan.
  • In a large bowl beat reserved cake mix with cream cheese, chocolate, sour cream, and sugar.  Add eggs one at a time until just blended.  Pour into crust.  Drop food coloring into the center of filling and swirl 2-3 times with the tip of a sharp knife.   Bake cheesecake for 65-75 minutes, until cake is set at least 2 inches from edges, but still a little jiggly in the center.  Turn oven off.  Leave oven door open 4 inches.  Leave cheesecake in oven for 30 minutes.  Remove and place on cooling rack for 30 minutes.  Chill cheesecake for at least 6 hours or overnight before garnishing and serving.
  • To serve, run a small metal spatula around the outside of cake and then release from pan.  Garnish with chocolate chips, whipped cream or chopped chocolate truffles.  Cut into small slices to serve as it’s very rich.  Serves 12-14.  Store covered in refrigerator or freeze.

  2. Oh my goodness! I hope I’m the Emily, along with Patti and Deb in the winners category. I really do have to make cauliflower and beer cheese sauce. One of our favorite veggies. The adorable heart crackers were so sweet for birthday boy, I bet everyone was scooping up the delicious brie! Great recipes Jenna………Enjoy your Sunday.

    I am delighted to be a winner! Congrats to Emily and Patti too! The cauliflower and beer cheese sauce sounds wonderful. I’ve been making cauliflower fried rice two nights a week because it is so yummy (and low cal) but I need to try your recipe soon since we love cauliflower. The heart crackers and brie were perfect for your celebrations. Looking forward to your MacKenzie-Childs post 🙂
