April showers, Easter eggs and Spring in Bloom, April is such a happy month
Flavor of the month for April is Coconut
When I was debating what this month’s flavor should be, I searched for coconut recipes on Pinterest and was amazed at the variety of recipes I found!
I can’t wait to make our favorite Coconut Shrimp and serve it with Pina Colada dipping sauce. I also am looking forward to making pancakes with coconut flour and trying the Whole 30 Coleslaw…{see links in recipe list below]
We will be having a family combination Easter/birthday weekend this year and I’ve already started menu planning with a dedicated Easter Birthday Weekend Pinterest board here

Grilled Lemon Garlic Zucchini from Damn Delicious turned into Zucchini Ribbons with Lemon & Roasted Garlic
Romaine Wrap Vegetable Tacos went an entirely different direction and turned into Light & Fresh Garden Stuffed Shells
Paleo Egg Cups from A Healthy Life for Me turned into Pot o’ Gold Potatoes, not quite as healthy but…
Served on a bed of spinach with bacon dippers it was quite delicious
Roasted Asparagus and Broccoli with honey balsamic from Chef Kreso turned into Zoodle Primavera
Grand Hotel Bread Pudding with Whiskey Sauce turned into Pecan Pie Danish
Mini Grasshopper Pies from Thrifty DIY Diva turned into Lucky Shots for St. Patrick’s Day
Instead of making No Rise Pizza Dough from Plain Chicken for a Shaved Asparagus Pizza I used my favorite Pillsbury thin crust dough and made a Crazy Spring Radish Pizza with Asparagus
It’s always hard to pick a favorite, but I’d have to say it was a tie between Pot o’Gold Potatoes, and Crazy Spring Radish Pizza, humble comfort food with a twist!
