Take-out Tuesday, Pimiento Cheese & Bacon Puff Pastry Eggs

I’m sure you’ve heard the old adage, “Southerners will fry anything”

Yep, even pimiento cheese!  Whaaaaat!! 

These Pimiento Cheese Fritters are one of my favorites at a local marina

TDF…{to die for}

The balls of pimiento cheese are rolled in panko, fried, and drizzled with a heavenly sweet and spicy mustard sauce

The Masters golf tournament is coming up this week, and whenever I think of the Masters I think pimiento cheese! They’ve been selling pimiento cheese sandwiches to the fans since the tournament started, it’s part of the Masters tradition   ⛳️

Pimiento cheese is a Southern staple, but if you can’t stand the stuff, no worries, you can sub cheddar…

HH will be glued to the TV this weekend, so I decided to try making a warm pimiento cheese treat my own way, to bring the Masters to us

Okay, you might have to use your imagination…

These are supposed to look like Easter eggs…

You see that, right?  😂

Well, no matter what shape they turn out to be, they are hard to resist!

My “eggs” are stuffed with Smoked Gouda Pimiento Cheese, raspberry jam, and bacon

Possibilities are endless…

Orange marmalade, Swiss cheese, and ham

Fig jam, bleu cheese & chopped pecan

Bacon jam and caramelized sweet onions

Begin with spreading a thin layer of jam on a piece of puff pastry

Next add pimiento or grated cheese and spread into an even layer

Top with bacon and roll up

Once the dough was rolled into a log, shape it into more of an oval or egg shape by pressing down gently on the log

Slice and bake

Immediately after taking pastries from the oven, I gently pushed stray ends in and coaxed them into more of an egg shape

Serve them with eggs for brunch, as an app, or atop a green salad  😋

Pimiento Cheese & Bacon Puff Pastry Eggs

Smoky Gouda pimiento cheese, raspberry jam, and bacon filled pastry swirls
Prep Time 5 minutes
Cook Time 12 minutes
Course Bread, Breakfast, Brunch
Cuisine American
Servings 12 pastries

Ingredients
  

  • 1 sheet puff pastry thawed
  • 5-6 slices bacon cooked
  • 1/2-1 cup Smoked Gouda Pimiento Cheese*
  • 1/4 cup raspberry jam

Instructions
 

  • Lay pastry on floured board and gently roll out to thin and to seal folded seams. Spread with an even layer of jam. Top jam with an even layer of cheese. Lay bacon slices on top, parallel to the short side of dough.
  • Beginning with short side of dough, carefully roll into a log, as tightly as possible. Once log is rolled, gently push down on log to form more of an oval shaped log.
  • Carefully cut log into slices with a sharp knife, beginning in the center of the log and slicing toward each end. Lay the slices on a parchment paper lined baking sheet with space in between for expansion.
  • Bake at 400 for 12-14 minutes, until dough is cooked and golden. Baking time will depend on size of slices.

*or any pimiento cheese or grated cheese

Smoked Gouda Pimiento Cheese

Prep Time 10 minutes
Course Appetizer, condiment, Side Dish
Cuisine American, Southern
Servings 2 cups

Ingredients
  

  • 4 oz. extra sharp cheddar
  • 4 oz. smoked Gouda cheese
  • 4 oz. diced pimientos drained well and patted dry
  • 1/4-1/2 cup mayonnaise preferably Duke’s
  • salt & pepper
  • red pepper optional

Instructions
 

  • Grate cheese.  Mix in pimientos.  Add mayonnaise in small amounts until you reach the consistency you like.  Season to taste.  Will keep in refrigerator several weeks.

    Pimento cheese is the Pâté of the South Jenna! I can only imagine how good your puff pastry eggs are with the sweet jam and salty bacon. We were just talking about whether or not the azaleas would be blooming at Augusta National for The Masters this year with the warm spring temperatures. The azaleas in bloom are as iconic as the pimento cheese sandwich 🙂

    Did you say, “if you don’t like pimento cheese?” WHAAA? Somebody wasn’t raised right if they don’t like the P.C. These look amazing, but I’d call them golf balls, not eggs. That way, your hubby will think you were thinking only of him!

    Oh we love homemade pimiento cheese here too but I love how you’ve jazzed it up Jenna . I read all the comments and I love Mary’s description and Leslie Anne would pass out at a negative thought on PC. Looks like a wonderful time to be at the beach house.
