Recipe Box, Duke’s Parmesan Chicken Strawberry Balsamic Salad

This elegant summer salad is simple easy to throw together on a busy weeknight

Strawberries are becoming irresistible in the market right now and paired with fresh greens and a luscious baked chicken, your tastebuds are in for a treat

The chicken is coated with Duke’s Mayo and Parmesan

You can prep the tenders right in the pan, spread, sprinkle, turn over, repeat

Pop them in the oven for 30-45 minutes {time depends on the size of the chicken} and go have a glass of wine and relax   🍷

If you use pre-washed greens, the salad is a snap to prepare

As the chicken bakes, the mayonnaise breaks down, basting the tenders

Use a spoon to scoop up the pan juices and baste tops of chicken about half way through baking time and add a few more sprinkles of cheese

Place salad greens on plate or in a pasta bowl and add chopped pecans, sliced strawberries, and add optional crisp bacon pieces and crumbled bleu cheese if desired

Top salad with 2-3 chicken tenders

Drizzle salad with Strawberry Balsamic Vinaigrette

I used Stonewall Kitchen’s Strawberry Balsamic Vinaigrette or you can make some from these recipes:

    I love chicken salads!!

  2. Yum! Sounds and looks delicious, Jenna! I love fresh strawberries with balsamic vinegar! We don’t have Duke’s mayo up here, I’m pretty sure. The big brand is Hellmann’s (“when you bring out the Hellmann’s, you bring out the best” is the little song that goes through my head from old ads!) but I’m intrigued by all the references to Duke’s on southern blogs. I must try some! And I do like your suggested waiting-time activity 🙂 Makes cooking actually fun! Linda

  3. Jenna, how could a strawberry salad with chicken tenders on top not be delicious. And you are cooking in season with the tasty strawberries being in season!

  4. Leslie Anne Tarabella says:

I love every single solitary ingredient in this salad! Going shopping today for chicken (can you believe I’m out?!!!) and strawberries!

  5. Looks delicious and really springy! All my fave ingredients in one salad!

  8. Hi Jenna, your chicken recipe looks wonderful. Fresh strawberries add such a lovely flavor to the dish. Another recipe to add to our list.

  9. Kitty says:

I have a salad everyday for lunch, Jenna (so I can have dessert!! LOL!) and I make a balsamic vinaigrette. I normally add sliced turkey lunchmeat, but I’m going to try your Parmesan chicken tenders, only I’ll have to use Hellmann’s. I’d love to try Duke’s mayo, if I could find it.

  10. Mary says:

Your salad sounds delish Jenna and we’re hard core Duke’s fans! 🙂
