The Organized Life, June Paint Bucket

The monthly Paint Bucket is my way of organizing recipes into a small seasonal group to focus on, one month at a time.  It isn’t a to do list, but an inspiration list for reference.  Often times the recipes are just the start point, and the resulting dish is decidedly different, but organizing in advance narrows choices and ultimately saves a lot of time

Now that it is unofficially summer, our meals are going to revolve around all of summer’s bountiful produce, fresh corn, ripe tomatoes, berries and melons, zucchini and other vegetables straight from the garden…

It was hard to choose one flavor to focus on, but I finally decided that the flavor of the month for June is Peach   🍑

Georgia gets all the credit for peaches, but Clanton, in Chilton County, Alabama, produces cream of the crop sweet peaches and it is home to Peach Park and the

Instead of making South of the Border chicken recipes as I planned, I went to the Greek Isles instead with Chicken Gyros with Shortcut Tzatziki

 

I made two recipes with the flavor of the month, Lemon 🍋

Lemon Ricotta Lasagna Rolls with Greens and Brown Butter turned into Lemon Ricotta Lasagna Rolls with Spinach, Fennel & Basil

 

Impossible Lemon Coconut Pie from Happier than a Pig in Mud turned into Magic Lemon Bars

 

Cakes weren’t on my May Bucket list, but apparently I was in the mood for cake and made 2 pretty ones

Coconut Poke Bundt Cake for Mother’s Day with a fresh rose topper

 

 

Pineapple Volcano Rum Cake, with a pineapple buttercream lava flow and a fresh pineapple topper

 

It was a delicious month!

    Jenna, I loved stopping at the farm stands comping and going to the beach. A few weeks ago I stopped in Chilton county and bought fresh peaches and some of them went into a peach cobbler. All of us who travel 65 are familiar with the giant peach! You have a great file of recipes for the month, I get hungry just visiting your blog!

  2. I like the idea of focus and I like the idea that if something hits you (like the Mother’s Day cake) you can go for it! I just read an article in the NYTimes about the damaged Georgia/Carolina peach crop this year. They’re going to be fewer in supply and probably pricier. I hope the Michigan peaches fared better!

    Everything looks delicious Jenna! South Carolina is the largest producer of peaches on the East Coast and there’s going to be a peach shortage this year thanks to Mother Nature and a late March freeze 🙁

  6. Jenna, I love all things peach! It is always tempting for us to make a stop at the Peach Park. We love the fried Peach pies! I am waiting on the Peach and prosciutto pizza…sounds like the perfect summer pizza!

    I made the Peachy Bread Pudding yesterday for a Family celebration. Peaches are one of our favorite fruits, so I was pretty sure it would be enjoyed and it was loved by all! Peach ice tea is always on hand here all summer. I think I need to take a trip to Chilton County and the Peach Park – someplace this New Englander has never visited. Thank-you for a delightful post.
