Party Panache, Easy Game Day Menu with a Pizza Bubble-up and BBQ

I am constantly looking for ways to make entertaining easier, and one of my favorite helpers is the slow cooker

“Why are there paper towels under the lid?” you might ask

Well, that’s the handy dandy trick to use when cooking this dish with canned biscuits

Talk about easy!

Cut everything up and pile it in!

The paper towels absorb moisture to keep the biscuits from getting soggy

After 2 hours, the magic has happened!

Perfect for noshing during football games

Note: You can also bake this in the oven, see directions included in the recipe below

This was a super simple menu

This White BBQ Sauce is great on anything! {recipe below}

Store bought queso, kept warm in a mini crock pot with chips and simple vegetable dippers

Dessert was Salted Caramel Apple Hand Pies

White BBQ sauce and grilled chicken were made for each other!

Pepperoni & Pineapple Pizza Bubble-up

Prep Time 5 minutes
Cook Time 2 hours
Course Appetizer, Side Dish
Cuisine American, Italian

Equipment

  • large oval slow cooker
  • paper towels

Ingredients
  

  • 1 can 8 count, large biscuits, such as Grands or Trader Joe’s Buttermilk Biscuits
  • 20 large pieces pepperoni cut into 1/4s or 40 pieces mini pepperoni
  • 1 cup chopped pineapple
  • 3/4-1 cup pizza sauce
  • 4 oz grated extra sharp cheddar cheese
  • 2 oz. shaved Parmesan cheese

Instructions
 

  • Spray slow cooker thoroughly with cooking spray.
  • Cut biscuits into 1/6s. Place in slow cooker.
  • top with pizza sauce and toss around to coat pieces.
  • Add pineapple and pepperoni, distributing evenly.
  • Top with cheeses.
  • Cover the top with paper towels and secure with lid. Cook on high for 2 hours. Turn heat off or lower to warm. Remove lid and provide long spoon for serving out of the pot.

Notes

*you don’t have to use a slow cooker for this recipe. Follow directions except place ingredients in a shallow casserole dish that is big enough to spread out biscuits in an even layer. Bake at 375 degrees for 20-25 minutes or until dough is cooked through and golden.

ALABAMA WHITE BBQ SAUCE

Prep Time 5 minutes

Ingredients
  

  • 3/4 c mayo
  • 1/3 c lemon juice [about 2 large lemons]
  • 1/3 c vinegar
  • 1/4 c sugar
  • 2 tsp salt

Instructions
 

  • Combine ingredients and brush on grilled or baked chicken
  • Makes 1 1/3 cups

  7. Well, now, those pepperoni biscuit bubble-ups look like one of West Virginia’s staple foods – the pepperoni roll, made famous by coal miners’ wives who made them and packed them for lunchboxes. Adding pineapple sure adds a twist. You’re always cooking up something special, Jenna!

    Ok. My crock pot has an FSU decal on it that has been stuck there for years. Other than that, I love your recipe and the paper towels are pure genius. Must have come from another school. (hahahahaha).
