Recipe Box, Crazy Pizza Bread Loaf

There is a recipe on my Paint Bucket this month for a Pull Apart Pizza from Climbing Grier Mountain

It is basically an assembled raw pizza

Cut into strips and then into squares, stacked into 4 or 5 sections, and placed in a loaf pan to bake

That sounded like fun and a unique twist on pizza

The original recipe is made with Brussels Sprouts, but I decided to go with asparagus

I was going to shave it, using a carrot peeler, but that was way too much trouble, so I just sliced it instead

I used my favorite Pillsbury Thin Crust Pizza Dough in a can

A thin layer of prepared Alfredo

Crispy Bacon and 3 kinds of cheese

But wait… what’s wrong with this picture  😳

As I began to cut the pizza into strips I realized I made a major mistake

No parchment

No way to get this thin, delicate, sticky dough masterpiece off the cutting board, much less cut it into squares and make nice little stacks

😱

This is where a little pep talk helps

“You can do this!”

“Figure something out!”

Starting from the end I hadn’t cut yet, I carefully rolled…and when I got to the cut strips, I mushed and pleaded and begged it to stick together

Then I cut the roll into 6-7 large slices and placed it in a parchment lined loaf pan

Which is THE BRILLIANT 💡  PART of this method

Spray the loaf pan with cooking spray, line it with parchment and then place the dough on the parchment

When the bread is done it lifts right out!

Cut it into slices or squares

It’s cheesy, gooey, crispy on the outside, soft on the inside, oozing bacon and asparagus

You can adapt this method to any combination of ingredients you like!

Crazy Pizza Bread Loaf

Prep Time 15 minutes
Cook Time 55 minutes
Course Appetizer, Main Course
Cuisine American

Ingredients
  

  • 1 pizza crust dough*
  • 6-8 slices bacon cooked until crisp
  • 16 asparagus spears or one bunch
  • 1 cup Alfredo sauce
  • 2 oz bleu cheese** crumbled or cut into pieces
  • 2 oz grated Parmesan cheese
  • 1 oz grated Pecorino Romano cheese

Instructions
 

  • Roll out dough onto a piece of parchment paper for ease of moving later. Spread crust with an even layer of Alfredo sauce. Break tough ends off asparagus and cut stalks lengthwise into 3-4 long pieces, saving tips for another use if desired or you can include tips. Place asparagus pieces evenly over dough. Top with bacon and cheeses. Roll up from short end, carefully tucking ingredients in and mending dough if it tears, into one log roll. Cut into 6-8 slices.
  • Spray a loaf pan with cooking spray and line with a piece of parchment paper. Place dough slices into pan, as evenly as possible, pressing and squeezing to fit if necessary. Bake loaf at 350 for 30 minutes. Check loaf and continue cooking for 15-30 more minutes until dough is golden brown and cooked through. Let sit in pan 5 minutes, then carefully lift loaf from pan. Slice bread into thick slices or squares to serve.

Notes

*I used Pillsbury Thin Crust dough for this recipe, if you use another dough, baking time might need to be adjusted
**sub mozzarella or white cheddar if you prefer

    Looks fabulous! I have made chopped pizza before, where you put the ingredients all together on the board – chop the dough up a bit and bake – a lot messier looking than yours but so fun and easy – so I think your solution was perfect. Love the idea of bacon and asparagus!
