Take-out Tuesday, Iron Skillet Smokey Mac & Cheese on the grill!

HHjr made this incredible pasta dish recently and OMG it is so good!

You just want to sit undisturbed and savor it bite by bite~

He cooked it on a Big Green Egg, but any grill or smoker will work, just keep an eye on the temp and the cooking time might vary

The smokey flavor is not overpowering, it just adds a wonderful layer of flavor

It’s easy to prep, make a basic white sauce while the pasta is boiling

This is a good basic white sauce that will work well in so many situations, 1 cup milk, 2 T flour, 2 T butter

Melt the butter and stir in flour to make the roux

Add milk and cook and stir until you have a thick creamy sauce and then stir in cheese

Combine cooked pasta with finished sauce, put into skillet and top with more cheese

After cooking on the grill the dish has a cheese crust over the top and creamy pasta inside

I might or might not have eaten this 3 nights in a row  😳

Iron Skillet Smokey Mac & Cheese

Cooking this on the grill gives it a wonderful smokey flavor

Equipment

  • iron skillet

Ingredients
  

  • 8 oz penne pasta or macaroni
  • 1 cup milk
  • 2 T butter
  • 2 T flour
  • salt & pepper
  • 6 oz extra sharp cheddar grated
  • 2 oz Parmesan grated

Instructions
 

  • Boil pasta until just done. Drain. Meanwhile make the cheese sauce by melting butter in a large saucepan.
  • Stir in flour and cook 1 minute, incorporating flour to form a roux. Slowly add milk, stirring to incorporate. When all milk has been added, stir until sauce is smooth and has thickened.
  • Season with salt and pepper. Add 4 oz. of the cheddar and all of the Parmesan and stir until melted.
  • Add pasta to sauce and stir to combine with sauce. Pour pasta and sauce into a seasoned iron skillet. Top with remaining cheddar. Place on grill with lid down and cook over medium coals, about 350 degrees for 45-60 minutes.

Use any cheese you like, and try to use at least two different kinds, that will really add a depth of flavor

  3. Jenna, we love mac ‘n cheese…this looks and sounds delicious! How nice to have a son that is a chef at the grill…we could probably eat this every week! Happy rainy Tuesday and I hope we don’t have bad weather.
