We had a very Jolly time!
but when your guests arrive at 11am on Christmas Eve, you better do as much as possible the day before
It was 3:30 pm Christmas Eve Eve, and I was melting…
Everything for the gathering was done except for one more cookie
I was very tempted to serve a bowl of candy canes instead…
But let me tell you, these cookies are so easy to make
You can make them even when you’re running on empty
about to go down the drain…
They bake in 7-10 minutes, so you get a reward almost immediately…
The perfect holiday cookie!
They are soft and really do taste like red velvet cake
With a smear of canned cream cheese icing and a few peppermint sprinkles they are party ready in no time at all!
This is a versatile cookie, you can get 3 different flavors depending on how you decorate them
The cookies are wonderful just plain, soft red velvet texture like cake and the white chocolate chips for extra flavor
Frosted with cream cheese icing, they take like red velvet cupcakes
Topped with crushed peppermint candies, they taste like candy canes

There are a gazillion recipes for Red Velvet Cookies floating on Pinterest, this one is adapted from several of the ones I read
Red Velvet Candy Cane Cookies
Ingredients
- 1 box Red Velvet Cake Mix
- 2 large eggs
- 2 T water
- 1/2 cup melted butter
- 1 cup white chocolate chips
- cream cheese icing canned or homemade
- peppermint candy pieces
Instructions
- Beat cake mix with eggs, butter and water until combined, 1-2 minutes. Stir in white chocolate chips. Drop by small spoonfuls, about 2 T per cookie, onto a parchment lined cookie sheet, spaced 1-2 inches apart.
- Bake at 350 for 7-10 minutes. Cookies might look a little under done but will set up when cool. Let cookies cool completely before decorating.
- Frost cookies with icing and sprinkle with peppermint if desired.
