Recipe Box, Loaded Spinach Spaghetti Alfredo

I know January is a month for a healthy new beginnings

And we have been eating lots of salads, veggies and lean protein…

But when the temperature is 22 degrees,

and there is 1/2 inch of  ice on everything in a subtropical zone,

and your pipes are frozen for the 2nd time in 2 weeks

😵

You need something warm, filling and comforting!

This truly isn’t quite as decadent as it looks, promise

I used light Alfredo, light whipped cream cheese, protein enriched pasta,

and only 1 slice of bacon per serving

Start by cooking the bacon, then remove it to drain, reserving 1-2 T bacon fat,

Add the spinach to the skillet

Once the spinach has wilted and cooked down, add garlic and cook for a minute

Next stir in the cream cheese to melt

Add the light Alfredo sauce, 1 serving has only 45 calories and 3 grams of fat

Add the drained pasta to the sauce

Stir to combine and turn out into a prepared baking dish

Sprinkle with Parmesan and bake now or cover and refrigerate for baking later

Parmesan cheese is such a great way to get a rich flavor without a lot of calories, a little goes a long way

All done, dig in!

Variations:

Cooked chicken, ham, sausage, turkey would all be a wonderful addition to this dish, but you might need to increase the sauce amount depending on how much you add.

Also, asparagus, peas, kale, broccoli, just about any vegetable you love would work well too

You could also add the bacon into the dish before baking but I didn’t want to loose the crispy texture so it was added as a garnish

Looks wonderful and has my mouth watering. All it needs is some good garlic toast to go with it. Thanks for another good recipe.

  5. Sharon Mann says:

Looks wonderful for a day like today! We are suppose to warm up a little today and more tomorrow..

  8. Oh, you are killing me here! This looks so delicious that I’m actually starting to drool. I would make this now if I had baby spinach and bacon on hand. Why, oh why did I let myself run out of these two items? Well, I won’t be heading to the store until next week, but I guarantee you this is going to be on my cooking agenda in the near future.

  9. Jenna, I am so sorry you are dealing with frozen pipes again. Maybe that fabulous looking dish helped your feelings! Just the mention of Alfredo puts the hubby in a happy mood. This really looks and sounds delicious.

  13. Jill Kuhn says:

Oh, no! Sorry to hear you have had frozen pipes!! 😳 Your spaghetti dish looks very yummy! Thanks Jenna for the recipe! 😊

  14. Mary says:

Love your combo of ingredients Jenna, comfort food for sure! Being without water is the pits…I hope you didn’t have any bursting pipes from your freeze to add insult to injury! We’ve been in a ‘comfort food zone’ for a week now. Lots of calories and wine consumed at our house with the loss of power, no TV for a week due to the dish being hit, roof damage (no help from our insurance company) and attaching a tarp in preparation for the 7 inches of snow. Keep Calm and Winter On 🙂

    • Oh no! You poor thing! we didn’t have any burst pipes, once they thawed out everything was fine…you really did have a week, hopefully you’re getting back to normal now!
