Take-out Tuesday, Raspberry Cheesecake Trifle

Happy Fat Tuesday!

We will be celebrating Fat Tuesday today with either Baby Beignets

or Crescent Roll King Cake for breakfast or dessert

and perhaps Mardi Gras Gratin or

a Muffaletta Pie for supper

And a Raspberry Cheesecake Trifle for Valentine’s Day tomorrow!

Believe it or not you can have this in your fridge in 20 minutes!

simple ingredients

Crumble 1/2  of the cookies into the bottom of the bowl

Beat the cheesecake jello with milk for 2 minutes and then beat in the cream cheese

Place 1/2 of cheesecake mixture in an even layer over cookies

Top cheesecake layer with 1/2 of raspberry pie filling

Top with 1/2 of Cool Whip

Repeat layers

Remaining cookies, cheesecake mixture, raspberry pie filling

and a final layer of Cool Whip

Garnish with fresh raspberries and chocolate chips

Refrigerate for 1-2 hours before serving

Raspberry Cheesecake Trifle

Prep Time 20 minutes
Chill 2 hours

Equipment

  • Trifle or deep bowl

Ingredients
  

  • 1 pkg Pepperidge Farm Milano Raspberry Chocolate Cookies
  • 2 boxes Jello Cheesecake pudding & pie filling
  • 3 cups milk
  • 4 oz. cream cheese softened
  • 1 can raspberry pie filling
  • 1 8 oz. tub Cool Whip thawed
  • fresh raspberries
  • chocolate chips I used a mix of white chocolate, semi-sweet chocolate and dark chocolate chips

Instructions
 

  • Make cheesecake filling by combining the pudding mix with milk and vanilla or emulsion for 2 minutes
  • Add cream cheese and beat until smooth
  • Break cookies into small pieces and put have of the crumbled cookies into the bottom of the trifle dish
  • Top with 1/2 of the cheesecake filling, then 1/2 of the raspberry pie filling and 1/2 of the Cool Whip
  • Repeat layers
  • Finish the top Cool Whip layer by garnishing with fresh raspberries and chocolate chips
  • Refrigerate for at least 1 hour before serving. Store covered in refrigerator
