Happy Valentine’s Day ❤️

This is a busy week!  HH is on the coast overseeing some construction

 

 

 

Replacing the pool liner is supposed to be a 2-3 day job, but the weather has been so rainy and cold it has morphed into several weeks

 

 

 

 

I’m in “the city” with HHjr for his birthday

I told him I’d take over the cooking this week for part of his birthday present

He works so hard at his job, raising his children, and taking care of things here

He is always cooking for everybody else, I wanted to spoil him for a change

 

 

For Fat Tuesday we started out nibbling on Praline Party Mix

 

 

 

 

The main course was Cheesy Bacon Party Burgers which I will be sharing with you soon

Brown the meat as you would for tacos, but it is seasoned differently

The filled buns are placed in a shallow casserole to bake

The result is a party pan full of Cheesy Bacon Burgers for any age to enjoy

We had Easy Dreamy Creamy Corn too, one of the boys favorites, quick prep and slow cooker convenience

 

 

 

Crescent Roll King Cake is good for dessert or an anytime snack

 

 

 

 

 

Instead of the traditional cinnamon filled ring,  I made Almond Danishes

 

 

 

 

garnished with almond icing, purple gel icing, and green and gold sprinkles

 

 

 

The Sausage Omelet Croissants are a version of Travelin’ Sausage Omelet Rolls

Instead of the crescent rolls pictured below, I tucked the omelet and sausage into fresh croissants

I assembled them on Tuesday, so all he had to do is warm them in the microwave this morning.

Nothing to cook, nothing to clean up!

 

 

 

Tonight’s menu was designed to be kid friendly, yet birthday worthy,

with a hassleback style baked chicken thigh, with prosciutto tucked in the chicken slices,

then covered with pineapple and BBq sauce…fingers crossed it turns out as good as I’m imagining it!

We are going to nosh on Fig & Bleu BBQ Potato Chips for an appetizer

Did you know you can make No Guilt Potato Chips in the microwave without frying?

 

 

 

 

The side dishes are going to be simple, our favorite Magic Potatoes, they have a crispy crust and a soft interior, and you can get them ready for baking in 5 minutes

 

 

 

Since we’re having bleu cheese in the appetizer and Parmesan in the potatoes, instead of making

 Roasted Green Beans Parmesan, pictured below, a super elegant and easy side dish

I will just steam them and serve them with a drizzle of olive oil, salt and pepper

Look for the slender French green bean, haricot vert, in the produce dept. where they have the specialty vegetables,

These beans are so good they don’t require any fancy prep

 

 

 

 

We already celebrated his birthday Saturday night at his sister’s house,

but there is still plenty of Raspberry Cheesecake Trifle leftover to enjoy again

    Happy Valentine’s Day Jenna! What a sweet gift for your son’s birthday doing some of the cooking while you are in the city. So many great dishes for everyone to enjoy. My favorites are the green beans and the trifle. One nice thing about being away is knowing your hubs is overseeing the pool work while your are away, hopefully it will be finished when you return to the coast. Enjoy your day…

    • He is loving it, thanks Rita! With 2 houses to maintain, there IS always something, but luckily we have a son and a son in law that can do just about anything, so we get a lot of help. We are anxious to get the pool finished so we can turn on the heater and swim. We swim all winter if it doesn’t get too cold, such great exercise for the older joints 🙂

    • He is always cooking for me, he is really enjoying his “time off!” Last nights party burgers were a big hit with all of us, I will be sharing that recipe very soon, thanks Carole!

It is 9:15 am and I have yet to have my Whole30 breakfast and now I see all of this tempting and tasty food. You must publish and illustrate a cook book! Do I remember that you are working on that or am I dreaming?
