Finally Spring has truly arrived everywhere and we can all dance around the Maypole!

 

 

 

I was truly torn choosing the Flavor of the Month, but finally decided to embrace Cinco de Mayo and the Flavor of the Month is Healthier Mexican, and see if we can lighten up some traditional Mexican favorites

I got the idea for Strawberry, Apple & Pear Spinach Salad with Strawberry Vinaigrette from Natasha’s Kitchen, but ended up making a different Fresh Strawberry Dressing from Cooktoria

 

 

 

Spaghetti Pie from Julie’s Creative Lifestyle turned into Creamy Asparagus & Spaghetti Pie

 

 

No Bake Strawberry Lemonade Pie from Bread Booze Bacon turned into Sarah’s Luscious Lemon Pie
