Take-out Tuesday, Spinach & Watermelon Summer Salad

We had a delayed Memorial Day celebration with our family, the boys wanted to come the following weekend instead for the grand opening of snapper season, so we had a “Memorial Day Delay”

They were very successful!

Red Snapper season is a very big deal on the Alabama Gulf Coast, it is limited to weekends only from June 1 to Labor Day

We had a lot of great meals, and I put together a menu of of easy peasy side dish recipes, and put the guys in charge of the grilling

The fresh fish were simply filleted and grilled with olive oil, salt, pepper and blackened seasoning

One of the sides we enjoyed was a refreshing spinach and watermelon salad with fresh strawberries, crumbled bleu cheese and pine nuts

This is more of an idea rather than a recipe, and you can easily sub feta for bleu cheese, and use any nuts you like

I have never had watermelon served in a green salad and I found the combination of spinach, romaine and watermelon so refreshing

It was tossed lightly in a vinaigrette so the flavors of the melon and berries could shine through, and the cheese added just enough tangy flavor to keep things interesting

This is the weekend menu, I always post it near the kitchen so everyone knows what’s for dinner

We often take the boat to a restaurant for lunch, but dinner time dining is crowded and the littles have to go to bed

The menu plan helps me and the grillers too!

I did the shopping before everyone arrived and only spent maybe 30 minutes or so per day to prep the sides, so it was a piece of cake!

The menu is a combo of new recipes from the June Paint Bucket and favorites from the archives

Spinach & Watermelon Summer Salad

fresh spinach, strawberries and watermelon combine with pine nuts and tangy cheese crumbles for a refreshing and healthy salad
Prep Time 10 minutes
Course Salad
Cuisine American

Ingredients
  

  • fresh spinach leaves washed and torn
  • mixed salad greens
  • cubed watermelon
  • sliced strawberries
  • crumbled feta or bleu cheese
  • roasted pine nuts
  • mild vinaigrette

Instructions
 

  • Adjust ingredient quantities according to the number of servings you want
  • Combine ingredients in a salad bowl and toss with a mild vinaigrette
Keyword feta, fresh spinach, pine nuts, watermelon

    • Thank you Emily, they had so much fun, and are going again this weekend…being organized in advance is the only way I can handle these busy weekends! This weekend it will just be HHjr and one of his friends, so they’re on their own, or they can cook for us!

  7. Jenna, this salad is definitely a winner! I have never had watermelon and greens. I am such a fan of red snapper, and your guys brought in a big catch. I know with the simple preparation, the fish was perfect! Your weekend menu sounds fabulous!
