Take-out Tuesday, Roasted Zucchini & Asparagus Parmesan

What is one of THE best things about summer?

Fresh Produce!!

We are filling our plates full of corn, tomatoes, peaches, strawberries, watermelon, zucchini… and the greatest thing about summer produce is it requires no enhancing…

Simple prep and a little roasting and all the delicious flavors will shine on their own!

This will be my go to recipe this summer, no sweat for the cook and who can resist roasted vegetables with a little crispy Parm…

Trimmed asparagus and cut zucchini are placed on a parchment lined baking sheet with a drizzle of olive oil, garlic salt, pepper

Grated Parmesan

Into a 400 degree oven for 15 minutes, and the magic will happen!

This is a perfect side for grilled meat, chicken, fish or even pasta

ROASTED ZUCCHINI & ASPARAGUS PARMESAN

so easy and so good, this pairing of roasted vegetable is a side dish treat
Prep Time 5 minutes
Cook Time 15 minutes
Course Side Dish
Cuisine American
Servings 3

Ingredients
  

  • 1 medium zucchini
  • 12-15 asparagus spears
  • olive oil
  • garlic salt
  • freshly ground black pepper
  • grated Parmesan cheese

Instructions
 

  • Trim tough ends off asparagus, rinse and dry. Rinse zucchini and cut into 1/3 inch rounds. Place vegetables on a parchment lined baking sheet. Drizzle with olive oil and season to taste. Sprinkle generously with cheese.
  • Roast in a 400 degree oven for 15 minutes. Serve immediately.

Notes

 sub any cheese you like for the Parmesan
