Peaches!

Summer is full of so many wonderful things, and summer produce is right at the top of my list, fresh corn, garden tomatoes, and sweet summer peaches are my favorites!

Fresh fruit is great in salads

Pair it with a flavorful cheese, and walnuts for crunch

Bleu cheese, goat cheese or any cheese you like

Top with a little bacon and really make your mouth happy!

Add a glass of chilled Chardonnay…

My favorite summer meal!

Top your salad with a light vinaigrette, and you don’t need much, just a little drizzle on the lettuce and let the other flavors shine through!

I like the Champagne Pear Vinaigrette from Trader Joe’s, or make your own, like this easy

Orange Marmalade Vinaigrette

Or

Strawberry Dressing

A Peach of a Salad

Prep Time 15 minutes
bacon 20 minutes
Course Salad
Cuisine American
Servings 2

Ingredients
  

  • 2-3 slices cooked crispy bacon
  • 8 cups crisp salad greens
  • 1 ripe fresh peach
  • 2 oz. bleu or gorgonzola cheese
  • 1/4 cup candied walnuts*
  • light vinaigrette
  • *Candied Walnuts Pecans or Almonds
  • 2 cups pecan halves walnuts or sliced almonds
  • 1 T real butter
  • 1 T olive oil
  • 1/4 cup brown sugar
  • kosher salt to taste

Instructions
 

  • Melt butter in olive oil over medium low heat. Add nuts and brown sugar.
  • Cook and stir until nuts begin to brown and caramelize.
  • Season with salt to taste. Watch carefully to avoid burning nuts. Turn nuts out onto wax paper to set. Store cooled nuts in a jar in the pantry.  Makes 2 cups
  • Divide greens between 2 large salad bowls.
  • Peel and slice peach.
  • Top greens with peach slices, bleu cheese, walnuts, and crumbled bacon.
  • Drizzle lightly with vinaigrette and serve.

  4. that looks delicious! I love TJ’s pear vinaigrette. It’s really tasty and the next time I go see the baby I need to make sure to pick some up. I took the last bottle to a potluck to dress the salad there and never got it back!

    It is National Ice Cream Day and I was craving peach ice cream, but it is not available. Surprise…all of your wonderful peach recipes appeared. I’ve made Jodi’s peach puffs and love them. But, the chilled peach soup sounds divine and that is going to be the replacement for the ice cream! The peach pizza is also a must try. Thank-you!
