Take-out Tuesday, BBQ Chicken & Pineapple Wrap

I’m traveling this week and got back to the “city” to find that my modem got fried during a weekend thunderstorm, so please forgive me if I’m late visiting, commenting or replying for a few days until it’s fixed…HHjr actually rigged it to work yesterday, I’m so lucky, he’s just like his Dad, they can fix anything! I have a new modem coming today so hopefully that will solve the problem

Anyhoo, this delicious wrap is perfect for summer dining, and you can cook the chicken in your slow cooker and keep the heat out of your kitchen!

Hawaiian BBQ chicken, juicy pineapple, crunchy lettuce and tangy green onions all wrapped up in a warm tortilla

The thighs cook in the slow cooker in a tasty sauce in 3-4 hours on high or let them cook all day on low

The sauce is a combo of Sweet Chili Sauce and Hawaiian BBQ Sauce

The chicken practically shreds itself!  Remove the bones and return chicken pieces to sauce in the pot and keep warm

Prep the toppings

I browned the tortillas for extra flavor but you don’t have to

I got a little color on both sides but left them flexible enough to form the wrap

Now add the lettuce, chicken and toppings and drizzle with more sauce from the slow cooker

Wrap it up!

Secure with a decorative pick or umbrella

You can serve these warm or cold, great for a picnic!

Hawaiian BBQ Chicken and Pineapple Wrap

Slow cooker makes this so easy, and these are great warm or cold, perfect for picnics!

Ingredients
  

  • 2 large bone-in chicken thighs
  • 1 cup BBQ sauce
  • 1 cup Asian Sweet Chili sauce
  • Salt & pepper
  • 2 cups pineapple tidbits canned or fresh
  • 2 cups chopped lettuce
  • 2 green onions chopped
  • 4 flour tortillas
  • 1 T butter & 1 T olive oil for cooking tortillas, optional*

Instructions
 

  • Spray interior of slow cooker. Add chicken thighs and season with salt & pepper. Pour BBQ sauce and sweet chili sauce over chicken and cover. Cook on low 7-8 hours or on high for 3-4 hours.
  • Remove chicken from slow cooker when done. Remove bones and shred chicken. Chicken will be so tender it will simply fall off the bone. Return chicken to remaining sauce in crock pot and keep warm.
  • *Melt butter with olive oil in skillet over medium heat. Add tortillas, 1 at a time, coating one side with oil then flip to coat the other side. Continue to cook until tortilla is beginning to brown on each side but is still flexible. Drain on paper towels and keep warm. Add more butter and oil if necessary to cook additional tortillas
  • For each wrap, place a layer of lettuce down the middle of warm tortillas. Top with chicken, pineapple tidbits, and scallions. Salt & pepper to taste and spoon some sauce from the slow cooker over all and bring the sides of tortilla up and over fiiling, forming wrap. Secure with a toothpick. Serve warm or cold.

Notes

*cooking tortillas is optional, it adds more flavor, but use tortillas straight from the package if desired

    Yum Jenna…love the combo of flavors! I looked at my slow cooker yesterday and I thought I should be using it to avoid turning on the oven in this heat! How nice your son can be your personal IT guy and get your up and running temporarily 😉

    how nice for you that HHjr fixed you up to get your computer working. My son that lives here had to work on mine for days, but got it going. Thank goodness that we have them!
