Take-out Tuesday, Mushroom Magic Pasta

Okay, so what’s so magic about this pasta?
First of all, you make it with a no boil, “ready” pasta
It comes fully cooked in the package and all it requires is a quick 60 seconds in the microwave
It is coated with a lightened up version of Alfredo sauce which basically makes itself right in the pan
First, saute the mushrooms in a little olive oil and butter until they are golden and juices are released
Now, here’s where the magic happens…
Add the ricotta cheese and milk, and season everything with salt and pepper
Stir and simmer and watch the sauce magically thicken and reduce
Add the microwave ready pasta to thickened sauce and stir
This Gemilli pasta was perfect because it has lots of grooves to hold onto the sauce
Give it a sprinkle of Parmesan or Italian Blend cheeses and serve it up
I served with with an easy side of roasted broccoli, Broccoli Candy
This recipe was adapted from Wonky Wonderful’s Mushroom Ricotta Pasta

Mushroom Magic Pasta
Ingredients
- 8.5 oz. Gemelli Ready Pasta
- 1 cup part skim ricotta cheese
- 1 cup 2% milk
- 8 oz sliced baby Bella mushrooms
- 1 tsp minced garlic
- 1/2 T unsalted butter
- 1 T olive oil
- salt & pepper
- 2-4 T grated Parmesan or Italian Blend cheese
Instructions
- Melt butter in large skillet with olive oil over medium high heat. Add mushrooms and saute until juices release and mushrooms turn golden, stirring occasionally, about 5-8 minutes.
- Add garlic and stir for 30 seconds. Lower heat to medium.
- Add ricotta and milk and season everything with salt and pepper.
- Cook and stir until sauce reduces and thickens, about 4-5 minutes.
- Microwave ready pasta according to package directions and add to sauce. Stir to coat.
- Sprinkle with Parmesan or Italian Blend cheese and serve immediately.

My shroom loving hubby would love this. But mushrooms are one of the few foods I just can’t stomach. Wish i liked. But can’t. Lol.

I have not used this ready made pasta yet; however, after seeing this most delicious looking dish, I am convinced I need to jump on that wagon…Love that it is quick and easy and looks so wonderful…now for my hubby who is a protein kind of guy, I can see adding rotisserie chicken with such ease.
