Party Panache, Tipsy Biscuit Bombs & Spicy Asian Chicken Quesadillas

Last weekend HHjr created some amazing game day apps that I’ve got to share with you

I was really surprised when he, Mr. Grillmaster himself, came back from the grocery store with this

“What are you going to do with that?” I asked…

“You’ll have to wait and see,” he said…”if I tell you now, you’ll just follow me around and take pictures

😳

So you’ll have to use your imagination here because I didn’t get any prep photos, but he basically cooked the Jack Daniels Pulled Pork and a family size Stouffer’s Macaroni & Cheese according to package directions

Then he took a can of 5 biscuits and pulled them apart, and stretched out each half into a larger disc

Then he piled on the pork and mac & cheese and sealed it up in a neat little package

A few minutes in hot oil, and viola,

Tipsy Biscuit Bombs!

Now do the math, 5 biscuits only made 10 of these luscious dough pillows stuffed with Jack Daniels BBQ Pulled Pork and Stouffer’s macaroni and cheese, so I was lucky to get one!!

I know, right…very sinful…you could also bake these instead, about 15 minutes on a lined baking sheet or until dough is golden

These things were gone faster than a hot knife through butter

He also whipped up some Spicy Asian Chicken Quesadillas

Wow is about all I can say here!

Before grilling, he marinated the chicken in this Ginger Mandarin Salad Dressing

Salad dressings make great marinades, and now there are so many varieties to chose from

The chicken had great flavor.  We actually had it for dinner a few nights before game day, so he took the leftover chicken, chopped it up and paired it with a little grated habanero cheese and crumbled bleu cheese inside 2 flour tortillas and browned them in an oiled skillet

The habanero cheese gives it a little spice, the bleu cheese an extra tang, and the Asian marinade another layer of flavor

Very swoonworthy!

It would be good with BBQ sauced chicken too, you could even use rotisserie chicken or any cooked chicken

Tipsy Biscuit Bombs

Prep Time 20 minutes
Cook Time 15 minutes
Course Appetizer
Cuisine American
Servings 10 bombs

Ingredients
  

  • 1 can 5 biscuits
  • 2 cups pulled pork {we used Jack Daniels pulled pork}
  • 2 cups prepared macaroni and cheese {we used Stouffer’s}
  • oil for frying

Instructions
 

  • Separate each biscuit into 2 halves. Pull and stretch each half into a large disc. Place 2-3 T of each pork and macaroni on each dough piece and pinch edges together to seal. Fry biscuits in hot oil until golden, 3-5 minutes or bake at 375 degrees for 15-18 minutes until done. Serve warm

Note: make more than you think you’ll need, they will go fast!

Spicy Asian Chicken Quesadillas

Prep Time 10 minutes
Cook Time 7 minutes
Course Appetizer, Main Course
Cuisine American, Asian

Ingredients
  

  • chopped cooked chicken marinated in an Asian salad dressing like Brianna’s Ginger Mandarin*
  • habanero or pepper jack cheese grated or thinly sliced
  • bleu cheese crumbled
  • flour tortillas
  • butter olive oil or oil

Instructions
 

  • For each quesadilla place chicken in an even layer on tortilla and sprinkle with cheeses. Control the spicy factor by the amount of cheese used. Cover with a second tortilla.
  • For each quesadilla, melt 1 T butter in skillet over medium heat and add equal amount of oil. Carefully place filled tortillas in pan and cook until underside is golden. Carefully flip quesadilla over, the cheese should be melted enough to hold it together, and cook the other side until golden, adding more butter/oil as needed. Cut into triangles to serve.
  • Repeat for as many quesadillas as you want to make.

*or use any cooked or grilled chicken, BBQ sauced, buffalo or rotisserie chicken
