Take-out Tuesday, Santa’s Surprise, Peppermint Ice Cream Cake

Everyone will love it!

Peppermint Ice Cream Cake!

It’s hard to beat Peppermint ice cream…

But if you add Oreo cookies, Cool Whip and chopped chocolate peppermint bark, it goes to a new level!

The first layer is crushed Oreo cookies…this is a little messy so instead of using a food processor, which I would have to clean, I put the cookies in a large plastic bag and crushed them with a rolling pin, so I could toss the bag away when I was finished

Transfer cookie pieces to a freezer container, I used a plastic Sterilite container I got at the grocery store

This layer is sort of a jumble, but once the cake is all put together, it won’t matter at all!

Gently spread the softened ice cream into a smooth flat layer over the cookies

Top with Cool Whip

Garnish with chopped chocolate peppermint bark, and sprinkles,

or use crushed peppermints or candy canes, holiday M & Ms, anything you like!

Freeze for at least 1 hour before serving.

Santa’s Surprise, Peppermint Ice Cream Cake

Ingredients
  

  • 1 pkg Oreo cookes {I used red filled Winter Oreos 15.35oz}
  • 1/2 gallon peppermint ice cream softened
  • 1 tub 8 oz. Cool Whip thawed
  • Peppermint bark chopped, for topping

Instructions
 

  • Crush cookies in a large ziplock bag with a rolling pin or food processor. Place into a rectangular casserole dish or freezer container. Spread out cookie pieces into an even layer.
  • Gently spread ice cream into an even layer over cookie crust. Top ice cream with an even layer of Cool Whip and top with peppermint bark pieces and sprinkles. Freeze at least 1 hour before serving
