Take-out Tuesday, Broccoli Carrot Slaw with Creamy Yogurt Dressing

This Broccoli Carrot Slaw has tons of flavor without a lot fat and calories, yet nutrients from the broccoli and carrots, and protein from the yogurt

The dressing is made with non fat Greek yogurt, a touch of light sour cream, vinegar and a dash of maple syrup or honey for sweetness

Make it in the morning so the dressing has a chance marinate and soften the vegetables

It only takes minutes to prepare

Season to taste with salt and pepper

You’ll never miss the mayonnaise

Add dried cranberries, pumpkin seeds, nuts, bleu cheese crumbles, anything you like!

Light and crunchy good!

Broccoli Carrot Slaw with Creamy Yogurt Dressing

Prep Time 5 minutes

Ingredients
  

  • 2 cups matchstick carrots
  • 2-3 cups broccoli slaw mix
  • 5 oz non fat Greek yogurt
  • 3 oz light sour cream
  • 1/4 cup Sherry or Apple Cider vinegar
  • 2 Tablespoons real maple syrup or honey
  • salt & pepper to taste
  • dried cranberries optional
  • Optional garnishes:
  • pepita seeds, pecans, walnuts, almonds, bleu cheese crumbles

Instructions
 

  • Place carrots and broccoli slaw in a medium size salad bowl and stir in cranberries. Mix remaining ingredients in a measuring cup and season to taste. Pour over vegetables in the bowl and toss to coat. Cover and refrigerate for several hours before serving. Garnish with seeds, nuts or bleu cheese.
