Whew, ok, so where did March go???
I guess we just Sprung right into April!
We have had such a rainy Winter and Spring in the South
We only been able use our Outdoor Kitchen a few times
I am hoping for better cookout weather in the next few months,
Lots of BBQs and gatherings…so with this in mind,
I am anxious to try out some new summer-like recipes
and chose

Asparagus Party Sandwiches from the Painted Apron archives can be made ahead and frozen. I like to make a batch and freeze them individually, that way I can pull one out and grill it like a grilled cheese or bake it in the oven for a quick and easy meal.
Cut into bite size pieces for a yummy appetizer
Boudin King Cake from Acadiana Table was the inspiration for Italian Sandwich Ring with Smokey Pimiento Cheese
You can freeze leftovers to enjoy another time and bake wrapped in foil to reheat
Ultimate Rainbow Vegetable Sandwich from Jessica Merchant inspired this sheet pan meal,
Sassy Southern Quiche was adapted from Hissy Fit Quiche from Plain Chicken

King Cake Crowns were a big hit for Fat Tuesday
Sugar Lemon Biscuit Bubbles were adapted from a recipe I saw in a magazine and can be decorated for any holiday or theme with colored icing and sprinkles

I just bought asparagus at the market yesterday! Those cute little sandwiches would be a fun way to introduce kids to asparagus (which I hated until I was 40… because it just wasn’t cooked right!)

I love pineapple Jenna, the so refreshing taste to me. Yes, I hope we have beautiful weather ahead after all the cold rain. Seems March came and disappeared with the wind, in a flash! Pineapple is not one of my favorite fruits to eat alone, but I do love it in recipes! Can’t wait to see what all you share for April! Send rain to Texas. I’m afraid we are in for a drought this year. We’ve not had as much rain and that is never a good sign for the summer! Hugs!
