Recipe Box, Sunny Side Up Brunch Pizza

This tasty egg topped naan pizza makes a great brunch/lunch treat
Make it for 1 or for many!
You can assemble one in mere minutes
Naan bread, pesto, fresh asparagus, Gruyère cheese, pine nuts and an egg
Spread on a nice layer of pesto and top it with chopped asparagus and pine nuts
Put the cheese around the edges forming a ring to hold the egg in place
Transfer your pizza{s} to a foil lined baking sheet{s} before topping with egg
Break the egg into a bowl
Slowly pour/slip egg into the cheese ring
Carefully place pan in the oven and bake for 10 minutes. Check for doneness and continue baking for several more minutes until the egg is set the way you like it
Some of the white may leak out onto the baking sheet, but it should stay in place for the most part
Season with salt and pepper and dig in!

Sunny Side Up Brunch Pizza
Ingredients
Per each pizza
- 1 individual naan bread
- 2-4 Tablespoons of pesto
- 1 Tablespoon pine nuts
- 3-4 fresh asparagus stalks cut into small pieces
- 1 oz Gruyère cheese grated
- 1 egg
- salt & pepper
Instructions
- Preheat oven to 375 degrees
- Spread pesto on naan in an even layer. Top with asparagus and pine nuts. Place grated cheese around the edge forming a ring to hold the egg. Transfer your pizza{s} to a foil lined baking sheet or sheets.
- Break egg into a bowl, then slowly pour/slip egg into cheese ring. Carefully place pan in oven. Check after 10 minutes and continue to bake until egg is cooked as desired. Season and serve.
Notes
This would made a great supper too
