Take-out Tuesday, Crazy Good Broccoli Salad

This salad is a MUST MAKE!

It has a little bit of everything…

2 vegetables, broccoli and onion

2 fruits, grapes and pineapple

plus 4 sources of protein,

cheese, bacon, nuts and Greek yogurt!

Winner winner Tuesday dinner!

Crispy bacon and fresh pineapple

It’s another Rainbow in a Bowl meal

Green broccoli florets, bluish purple grapes, purple onions, red bacon, orange cheddar, yellow pineapple and light brown almonds

Your taste buds will dance!

The dressing is healthy, and could not be easier

Stir sugar and vinegar into the yogurt

note: if you are totally anti yogurt, substitute mayonnaise

Leftovers were great the next day!

This recipe is adapted from Plain Chicken, Stephanie always is coming up with easy, crowd pleasers!

Crazy Good Broccoli Salad

Ingredients
  

Salad

  • 3 cups Broccoli florets
  • 12 red grapes,
  • 1/4 red onion, diced
  • 1/2 cup fresh or canned pineapple, cut in small pieces
  • 2 slices bacon, cooked and cut into pieces
  • 1/2 cup grated sharp Cheddar cheese
  • 1/2 cup buttery almonds

Dressing

  • 4 oz plain Greek yogurt
  • 1/2 Tbsp sugar
  • 1 Tbsp apple cider vinegar

Buttery Almonds

  • 2 cups sliced almonds
  • 1 Tbsp unsalted butter
  • 1 Tbsp olive oil
  • 1/4 cup brown sugar
  • kosher salt

Instructions
 

Buttery Almonds

  • Melt butter with olive oil in skillet over medium heat
  • Add almonds and sprinkle with brown sugar and salt to taste
  • Cook and stir for 4-5 minutes until nuts begin to caramelize, watching carefully
  • Turn out onto wax or parchment paper and add another sprinkle of salt. Let cool and then break into small clusters and store in the pantry in a jar with a lid

Greek Yogurt Dressing

  • Combine ingredients in a mixing bowl or jar

Salad

  • Cut off broccoli stems and cut florets into small pieces
  • Wash grapes, dry and cut in half
  • Combine all the salad ingredients in a salad bowl and add salad dressing, a little at a time, until salad is dressed to your taste

Notes

This salad will keep well for several days in the refrigerator

  14. This looks and sounds delicious, especially as a summer salad. How many grapes do we need? It’s not mentioned in your recipe?

    • hi Catherine, 10-12 grapes, really it’s up to you…thanks so much for telling me they were missing in the recipe, it’s fixed now! This salad is amazing and it can keep for several days.

    Jenna, My MIL made a version of your broccoli salad without the pineapple. Hers had pecans and was loaded with Duke’s mayo instead of yogurt but it was crazy good 🙂
