Take-out Tuesday, Colby’s Everything Potatoes

We had a fun filled weekend on the coast,

sunny weather in the high 70’s

and special friends at the beach house

It was a great weekend of boat and people watching

HHjr kept us full of wonderful food

One of our guests offered to make his specialty potatoes

Don’t you love guests that pitch in to help?

Uh oh, he is going to do the bowl toss!

He pulled it off, I was very impressed!

Fresh rosemary

Italian seasoning and minced garlic

Diced onion {optional}

On to a non stick foil lined baking sheet

Crispy on the outside soft on the inside flavorful potatoes!

Colby’s Everything Potatoes

Prep Time 15 minutes
Cook Time 45 minutes
Course Side Dish
Cuisine American
Servings 6

Ingredients
  

  • 1 bag 3 lbs, petite red potatoes
  • olive oil
  • 1 small onion diced, optional
  • 2 Tablespoons fresh rosemary diced
  • 2 tsp refrigerated fresh minced garlic
  • 1 Tablespoon Italian seasoning
  • salt & pepper to taste

Instructions
 

  • Cut potatoes into 1/8s. Toss with olive oil.
  • Add rosemary and toss again.
  • Add Italian seasoning and garlic and toss again.
  • Add onion and salt and pepper. Toss again and turn out onto a baking sheet lined with non stick aluminum foil.
  • Spread potatoes into an even layer.
  • Roast at 400 for 45 minutes, or until edges are crisp and golden. You can stick the pan under the broiler to crisp at the end if desired. Serve immediately.

    It sounds like you all are lucky to have Colby in your life. It is nice when guests like to pitch in and those potatoes look great. BTW, I loved the VW pontoon boat…not too practical but fun nonetheless. 😀

    Yes, it’s great when our guests enjoy pitching in to help the host. This is a great recipe. I make basically the same and everyone always enjoys it. If we are grilling we sometimes throw it on the grill, that’s tasty as well. I think I’ll pick up potatoes on my next list to the supermarket. This makes me hungry for this! Enjoyed your pics……..

    These potatoes look melt-in-your mouth delish! 😍 So nice to have him help out in the kitchen too! I roasted red potatoes in the oven on Sunday. I sliced mine super thin, mixed in olive oil and added grated Parmesan cheese. The cheese browns and is crunchy! I only cooked them for about 10 minutes. Forgot to add the garlic…😉 I like your recipe with fresh Rosemary too. 🌿
