How about a recipe for something that looks fancy,
tastes fabulous
and is perfect for so many occasions?
It’s sweet creamy tangy salty cheesy goodness all in one
This is a version of the ever popular crostini, but instead of using a hard slice of baguette, I chose a softer brioche loaf for the base
It’s topped with a generous layer of ricotta, sprinkled with bleu cheese crumbles {optional} topped with fresh nectarine slices and prosciutto
Under the broiler it goes for 4-5 minutes until the brioche edges are toasted, the prosciutto is crispy and the cheese is melted
Drizzle with a little balsamic glaze and top with fresh basil
There! And you didn’t even break a sweat!
Fancy & festive, yet easy enough to make for yourself for lunch
This would be great for showers, teas, luncheons, parties, BBQs, any summer gathering!

Nectarine Brioche with Prosciutto, Basil, & Balsamic
Ingredients
- brioche bread*
- fresh nectarines sliced
- proscuitto
- ricotta cheese
- bleu cheese crumbles
- fresh basil for garnish
- balsamic reduction for garnish
Instructions
- Slice brioche in half or into slices.
- Spread with a generous layer of ricotta {season with salt and pepper if desired}
- Top with bleu cheese crumbles and then nectarine slices.
- Top nectarines with torn pieces of prosciutto.
- Broil for 4-5 minutes until prosciutto is crispy, bread is toasted on edges and cheese is melted. Garnish with basil and a drizzle of balsamic reduction.
