Take-out Tuesday, Peach, Plum, & a Dash of Rum Ice Cream

Is there anything better on a hot day than cool ice cream?

How about ice cream topped with fresh summer fruit

and made with a splash of Coconut Rum,

Yum!

When I make no churn ice cream I usually use Cool Whip

 it’s sooo easy and I’m sooo lazy

but you can use real whipped cream if you prefer

You can also stir the fruit into the ice cream before freezing,

but I find the fresh fruit gets hard and I prefer to use it as a topping

rather than incorporating it into the ice cream base

Grab a seat at the island bar

Let’s eat our ice cream inside today,

so it doesn’t melt away!

It’s cool and creamy, and the sweet fresh fruit is irresistible

The island bar is set with a pineapple runner

Pineapple plates, coasters, napkins and glasses

Fresh peaches, plums, a mango and a flock of flamingos!

An ice cream treat

And fruit pillows at your seat!

Enjoy every moment of summer…

it’s quickly going to be over!

Peach, Plum & a Dash of Rum Ice Cream

Ingredients
  

  • 1 tub 8 oz. Cool Whip, thawed {or substitute 2 cups heavy cream, whipped}
  • 2 T sugar
  • 1 can 14 oz. sweetened condensed milk
  • 1/2 cup rum {I used Malibu Coconut Rum}
  • 2 peaches 1 plums, chopped

Instructions
 

  • Stir sugar into milk, then fold rum and milk into Cool Whip or whipped cream. Freeze. Scoop into bowls to serve and top with chopped fruit

    That ice cream is going to be made in Pennsylvania soon! I wonder if I added raisins along with the additional fresh fruit… rum raisin ice cream could be made! Sweet Man loves Rum Raisin!

  3. Jenna, the hubby and I love ice cream! This one looks fabulous and will be made soon. I agree about adding the fruit in the ice cream makes it hard, much better on top. Last week in the Texas Hill Country there were peach orchards and stands everywhere. I don’t think there is anything better than a fresh juicy peach. Have a wonderful day!

What a great idea in using Cool Whip for the no churn ice cream. Yes, the fruit does get so hard, but your idea of using fresh on top works for me!! Enjoy your happy place!

    • The local favorite drink on the coast is made with Bailey’s Irish Creme and rum and it’s really good! You can skip the rum if you want and the ice cream will still be good!
