This time of year, when garden zucchini is so abundant that August 8 was declared National Sneak a Zucchini on your Neighbor’s Porch Day, I rounded up my favorite recipes for using zucchini
I love zucchini and cook it year round…
A lot of these recipes are figure friendly too!
It is wonderful roasted simply with a little olive oil, salt & pepper
Try adding cherry tomatoes and yellow squash to the pan for a vegetable rainbow
Or how about
Zucchini Ribbons Roasted with Lemon and Garlic
Zucchini Frico, a crispy thin cracker to serve as an appetizer, or with soup or salad

Love zucchini, so many options! 😀 I make a zucchini bread that my family really loves.
I was planning on doing a zucchini bread post but the recipe I tried was a disappointment, so I did the round up instead…is your recipe sweet? The one I tried called for cheddar and green onions, on paper it should have been great, but it just really had no taste so I tossed it…
Yes, and it has cinnamon and chopped nuts in it.😋

I will pretty much eat zucchini however served! Of course, I love zucchini bread, but I’ll eat it soft boiled with butter. Our favorite Chinese restaurant makes it with a deep fried coating that’s really good, so I bet an air fryer would make it an even healthier option. I get it every time we go.

zucchini is such a handy vegetable, it can star in anything!
I love it just about every way– roasted, fried, in bread/muffins, as zoodles. It really doesn’t matter I just love zucchini.
