Take-out Tuesday, Amped Up Taco Tuesday!

We often have tacos during the week

The boys love them and they are so easy to make

We have made them in a variety of ways

Loaded Chicken and Vegetable Taco Bake

Baked Ground Beef and Refried Beans Tacos

Taco Salad is my personal favorite

And I love Taco Soup

We’ve even made a Taco Bread Boat

But when I suggested tacos last week

I had no idea HHjr was going to surprise me with this!

He started with a layer of Knorr Taco Rice

Topped with taco seasoned ground beef

Then a lightly fried flour tortilla

Warm cheese queso was poured over the stack

And he topped it with chopped tomatoes and chives

Heaven!

Amped Up Tacos

Amp up Taco Tuesday with serving tacos in a different way!
Cook Time 30 minutes
Course Main Course
Cuisine Tex-Mex
Servings 6

Ingredients
  

  • 1 lb. ground beef {lean beef or ground chuck}
  • 1 pkg. taco seasoning mix
  • 6 small flour torillas
  • 2 pkg Knorr Taco Rice {each pkg makes about 2 1/2 servings}
  • cherry tomatoes chopped
  • chives or green onions chopped
  • 1 container prepared queso dip {in refrigerated section near cheese}

Instructions
 

  • Brown beef, drain and continue to prepare according to taco seasoning package directions. Prepare rice as directed on package. Lightly fry tortillas in a large skillet with a scant amount of oil. Set aside on paper towels. Heat queso.
  • Place a layer of rice on a plate. Top with a layer of taco meat. Top with tortilla. Pour warm queso over the top. Garnish with chopped tomatoes and chives. Serve immediately.
