Recipe Box, Favorite Not Guilty Recipes

I was on a “staycation” last week,

not cooking, not tablescaping, not entertaining...

Using these first few weeks of January to recharge

I have been catching up on doing my favorite things

like getting back to drawing every day for

the Doodlewash January challenge

DD requested needlepoint stockings for herself and husband NG

She wants an angel on hers and a Santa on his

I have to get going quickly to have them stitched and finished by next Christmas,

It looks like it will be Christmas around here all year long

Fa la la!

HHjr has been cooking like crazy,

so I’m a little behind on my recipe bucket list this month

Today I’d like to reshare some of my favorite not guilty recipes

to start off 2020 in a healthy way!

Need an appetizer or a nibble?

Try these fast & cheesy zucchini bites

Zucchini Frico

Craving pizza?

Try this all veggie pizza with a zucchini crust

Try some new combinations!

Grilled Romaine Salad with Pears, Brussels & Bleu

Are you missing pasta and mac and cheese?

This lightened up version is a little less guilty

Lightened Up Mac & Cheese

Potato chips and salty snacks are hard to give up,

Try these amazing microwave potato chips!

No Guilt Microwave Potato Chips

What’s for dinner?

How about a bowl full of irresistible roasted veggies,

an easy sheet pan dinner

Roasted Rainbow Dinner Bowl

Or a casserole full of zoodles and stir fried vegetables

You can control the amount of sauce and cheese, or just have them plain

Zoodle Primavera

How about some grilled blacked shrimp?

Yes please!

Blackened Lemon Shrimp Skewers

Lettuce Wraps are always a good choice

These are so tasty you won’t miss the bread!

Dessert?

You don’t have to skip dessert!

Spread apple slices with almond butter and sprinkle coconut,

sliced almonds, cranberries, raisins

or a chocolate chip or two on top

Loaded Apple Cookies

Or make this Cannoli Dip~

Made with low fat ricotta and whipped cream cheese,

it tastes like cheesecake with a lot less fat and calories

Lite Cannoli Dip

Next week I hope to play with our new Instant Pot

and make some other things on the January Paint Bucket

AND!!

Be sure to stop by Wednesday for the

5th Anniversary of the Tales of the Traveling Tote

Everything looks yummy! The lettuce wraps caught my eye and the apple slices look delish!

    Happy Sunday Jenna!

  2. A staycation in the dead of winter is a good idea. I love all of your doodlewash art and look forward to your shares. The food always look yummy. Enjoy your day, Jenna!

    • Thanks Pam! Did you have any issues from the storm yesterday? Our power was out for 10 hours!!

      • Jenna, there was damage in Etowah County, but we didn’t experience any nor we were without power. I was really anxious about this storm, James Spann had talked about it all week. So sad for the loss of life in our state. So glad you were safe even without power.

      • Oh good, glad you were safe…yes the weather people made me anxious too, but at least we had time to think and prepare…

  3. Shannon@Belle Bleu Interiors says:

Jenna, your artwork is beautiful! A staycation sounds perfect after the holidays. I have started a healthy eating plan after all the yummy holiday food I ate. Your recipes look delicious and have given me some great ideas. Happy Sunday!!!

  4. Cyndi Raines says:

Some great recipes here, thanks Jenna. We are under a winter storm watch with heavy ice expected so we are staying put and hunkering down. Will review these again for future use. 😁

  5. Your broccoli slaw looks good Jenna! It’s time for me to revisit that theme too. Have fun with the stockings:@)

  6. I love your stocking designs. I needlepointed my stocking eons ago and I have mom’s too. Haven’t done it in years. What treasures those will be!

  7. Pattie says:

I am going to try Zoodle Primavera. Somehow I ended up with way more zucchini that I imagined.

  8. Now THIS is my kind of round-up post, Jenna! Yum! I’ve been enjoying your watercolor challenges on IG. You are such a wonderful artist. Your amaryllis painting is beautiful!

  9. Sheryl says:

January is a wonderful month for recharging after all the hectic activity during the holidays. I love the drawing of the amaryllis. Several weeks ago I had one blooming in my kitchen that looked just like the one in the drawing.

  10. Mary says:

A delicious round-up of guilt free treats for the New Year Jenna! Sorry to read about your loss of power…10 hours would empty the refrigerator. Scary storms, glad you were safe ♥

  11. Jill Kuhn says:

You are making me hungry! 😋 I was in the middle of a cleaning project in my kitchen so we ate Lean Cuisine for dinner. 😉 Everything looks so colorful and delish, Jenna! 👍
