Take-out Tuesday, Peanut Butter Mousse Minis

I have a wonderful low cal treat to share today!

These mini mousses are only 2 ingredients!

Peanut Butter & Cool Whip!

I used Lite, but you could use Fat Free

Begin by mixing the peanut butter with an equal amount of thawed whipped topping

about 1/2 cup each

Then continue to add Cool Whip about 1/2 cup at a time,

stirring to combine

I only used about 3/4 of the 8 oz tub,

I didn’t want to loose the peanut butter flavor

but you can incorporate the whole tub if you like

Place mini cupcake papers on a shallow pan that will fit in your freezer

I used a cookie scoop to make these mini balls

Pop the pan in the freezer for several hours and

then transfer to a ziplock bag until ready to serve

Serve them straight from the freezer

They taste like a combination of ice cream and cheesecake!

Try a bite!

These satisfying, not too guilty bites, clock in at about 75 calories

Recipe adapted from Skinny Frozen Peanut Butter Whips from the Creative Bite

PEANUT BUTTER MOUSSE MINIS

Prep Time 10 minutes
Freeze 4 hours
Course Dessert, Snack

Ingredients
  

  • 1/2 cup peanut butter smooth or chunky {only use a commericially blended peanut butter, like Jif, Skippy etc}
  • 3/4 tub Cool Whip Lite

Instructions
 

  • Put peanut butter into a mixing bowl and stir in 1/2 cup Cool Whip. Once that is blended, stir in another 1/2 cup and blend it in. Add a final 1/2 cup of Cool Whip and blend.
  • Set out mini cupcake papers on a shallow pan.
  • Using a cookie scoop or pastry bag, scoop or pipe mousse into cupcake papers. Set pan in freezer for several hours. Transfer mini mousses to a ziplock bag and keep frozen until right before serving.

    That’s one of those, “why didn’t I think of that?” items! I often will find myself scooping out a tablespoon of peanut butter for a quick pick me up, and those look really good. I bet they were a hit with the grands. You always have such great food ideas, Jenna!
