Take-out Tuesday, Triple Chocolate Brownie Cheesecake

Happy Fat Tuesday!

The last day of indulgences before the Christian season of Lent,

a time when many choose to give up sweets and other treats…

Let’s go all out and celebrate with a Triple Chocolate Brownie Cheesecake!

This was actually HHjr’s birthday cake,

he is not really a dessert eater, but loves cheesecake

This cheesecake is so easy to make you won’t believe it!

Prepare the brownie mix according to the directions on the box

I used Betty Crocker Delights Supreme Triple Chunk Brownie Mix,

Next beat the cream cheese with eggs, vanilla and sugar to make the cheesecake

Then stir in chocolate chips,

Put the prepared brownie batter into a sprayed 9 or 10″ springform pan

Top with cheesecake batter

Bake at 350 degrees for 25 minutes

Sprinkle with a few more chocolate chips

Reduce oven to 325 degrees and bake for 20 more minutes

Let cake cool completely and then refrigerate

Now, I have to be honest,

when I saw these Baileys Irish Cream baking chips I got pretty excited

but when I tasted them I couldn’t taste the Baileys, just chocolate

I made a simple chocolate sauce with heavy cream, chocolate chips and Baileys

It was delicious but I still couldn’t taste the Baileys…

But the sauce is wonderful anyway…

Save the Baileys for sipping!

The sauce is the 3rd chocolate source of Triple Chocolate Brownie Cheesecake

It might be a chocolate overload!

So sauce, or no sauce…

Baileys or no Baileys,

You won’t be disappointed!

This recipe is adapted from Simply Stacie

TRIPLE CHOCOLATE BROWNIE CHEESECAKE

decadent Bailey's flavored cheesecake in a triple chocolate brownie crust

Ingredients
  

  • 1 box brownie mix plus ingredients to make them {I used Betty Crocker Delights Supreme Triple Chunk Brownie Mix which calls for 1 egg and vegetable oil}
  • 2 8 oz. packages cream cheese softened
  • 2 eggs
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 8 oz Baileys Irish Creme flavored chocolate chips or chocolate chips divided

Instructions
 

  • Spray a 9 or 10 inch springform pan with cooking spray. Prepare brownie mix according to package directions and spread batter in an even layer on the bottom of the springform pan.
  • Put cream cheese, 2 eggs, sugar and vanilla into a mixing bowl. Beat together until smooth. Stir in most of the chocolate chips, reserving 1 -2 oz. for adding later. Put cream cheese mixture on top of brownie batter.
  • Bake at 350 degrees for 25 minutes. Turn oven down to 325 degrees. Sprinkle reserved chips on top and return to oven for 20 minutes. Remove from oven and cool on counter. Refrigerate until serving. Serve drizzled with chocolate sauce if desired

EASY DREAMY CHOCOLATE SAUCE

no need to buy chocolate sauce when it's oh so easy to make!
Prep Time 2 minutes
Course Dessert
Cuisine American

Ingredients
  

  • 2/3 cup heavy cream
  • 1/3 cup Baileys Irish Cream {or use a different liqueur like Kalhua or an additional cup of heavy cream}
  • 6 oz. chocolate chips

Instructions
 

  • Heat cream for 1 minute on high in a measuring cup in microwave. Stir in chocolate chips and set aside to cool. Refrigerate. Reheat in microwave on 50% power in 30 second intervals until it is drizzling consistency. Use a spoon to drizzle over cake. Makes 1 cup. Store in refrigerator for 7-10 days

    I’ll bet your cheesecake was a big hit for the birthday boy!! It certainly would be for me, Jenna. Thank you for the review of the Bailey’s chips. I have seen them, but I think I’ll skip. I do love a sip of Bailey’s, however!

    • I was so disappointed that I couldn’t detect the least little hint of Baileys in the chips, just tasted like chocolate to me! I really liked the brownie and cheesecake combo, it is very rich, but they complement each other well, thanks Kitty~
