Gifts from the Kitchen, Lucky Leprechaun Snack Mix

My family loves Chex based snacks

When I spotted Peanut Butter Chex I had to try it

I decided to make a St. Patrick’s Day version

I grabbed some “Irish” potato sticks

GOLDfish, and “treasure coins” aka peanut M & Ms

Combine the Chex, Goldfish, and Potato Sticks

Place on a large deep rimmed sheet pan or broiler pan and season

Combine Worcestershire with melted butter and olive oil

Drizzle over mix and toss well to coat

While the snack mix is baking, separate out the colors of M & Ms you want to use

The 2 lb. bag of M & Ms I bought had plenty of the yellow orange and green ones

and the other colors are saved for candy emergencies 😊

Transfer snack mix to paper towels to cool and then add M & Ms

Store snack mix in a large covered container

I shopped the house for  containers I could use for gifting

I found a green Ball jar

and tied faux forsythia to the side with a length of shamrock garland

and added a felt shamrock to the lid

I also found a glass vase and painted it with a leprechaun and shamrocks

I scooped up some snack mix and filled it up

Then covered the top with a small square of cling wrap

Then I tied a napkin over the top to hide the cling wrap

and secured it with shamrock garland

Festive, fun and happy snacking!

Lucky Leprechaun Snack Mix

Prep Time 5 minutes
Cook Time 40 minutes
Course Appetizer, Dessert, Snack
Cuisine American

Ingredients
  

  • 12 oz. Peanut Butter Chex cereal about 8 cups
  • 2 cups potato sticks like Pik-Nik sticks
  • 6.6 oz Flavor blasted extra sharp cheddar Goldfish snack crackers
  • Peanut M & Ms *
  • 1/4 cup olive oil
  • 1/4 cup melted butter
  • 1/4 cup Worcestershire sauce
  • Seasoned salt

Instructions
 

  • Combine cereal, potato sticks and goldfish crackers in a deep rimmed baking sheet or broiler pan. Sprinkle with seasoned salt. Mix melted butter with olive oil and Worcestershire sauce. Pour slowly over mix in pan. Using a large spoon or spatula toss gently to evenly coat.
  • Bake at 375 degrees for 20 minutes. Stir well and bake for 20 more minutes. Spread paper towels on counter top and transfer cooked snack mix on to them to cool. Add candy and place cooled mix into a covered storage container.
  • Makes about 8-10 cups of snack mix.

Notes

*I bought a 2 lb. bag of mixed colors and sorted out green, yellow, orange, using about 1/2 of the bag}

  4. Cute in the containers. Maybe I’ll make something like that for the kids when they come. The boys love the Goldfish. They’ll probably love the rest too. (I love the chex!)

    • Thanks Jeanie, your little boys would love this, but maybe use regular M&Ms, the peanut ones are so big, I wouldn’t want them to choke on them…Chex mix is awfully hard to resist!

    That is a great snack mix! We just made two different kinds of chex mix this weekend as my kids are big fans too. The first was a pretty traditional Chex mix and the second was a muddy buddy recipe with peanut butter Easter Reece’s eggs.
