Recipe Box, Saving Time Salad

If your part of the world is on Daylight Saving Time,
you no doubt are looking for that hour you lost when you Sprung Forward today!
I am calling this salad Saving Time Salad because it includes Chick-Fila chicken nuggets
Using take-out chicken certainly is a time saver!
This is my version of a Cobb Salad
Cobb Salad, according to Wikipedia,
was invented by the owner of the Hollywood Brown Derby restaurant, R. H. Cobb
Working late one night,
he combined what was on hand in the kitchen with lettuce for a late dinner
He enjoyed it so much that he put it on the menu and it became the restaurant’s signature dish!
Traditional Cobb Salad is composed of
salad greens, tomato, bacon, chicken or turkey, hard boiled eggs,
avocado, gorgonzola cheese and a vinaigrette
Not being a fan of hard boiled eggs,
I added asparagus and cucumber, and tossed in pecans for crunch
I served the salad with Fleming’s Blue Cheese Dressing
I roasted the bacon in the oven
With Chick-Fil-a nuggets,
the salad was ready in no time
HHjr and I both declared we could eat it just about every night!
Combining your own fresh ingredients with prepared food like chicken
Makes a hearty salad like this a breeze to whip up
Variations
You can use grilled chicken, rotisserie chicken, turkey, whatever you like
Change the dressing to Creamy Ranch, Honey Mustard, Italian, Thousand Island or your favorite vinaigrette
Use cheddar, Swiss or whatever cheese you prefer
Endless possibilities to create a wonderful hearty meal!

SAVING TIME SALAD
Ingredients
- Chick-Fil-a nuggets or any cooked chicken grilled, roasted, rotisserie
- cooked bacon strips cut or broken into small pieces
- fresh tomatoes chopped or sliced
- cucumber slices
- asparagus cooked to crisp tender,* and cut into 1 inch pieces
- pecan pieces I used honey roasted
- salad greens such as romaine, spinach, kale, iceberg or a combination
- Bleu Cheese Dressing or whatever dressing you like
Instructions
- Place salad greens into individual bowls or 1 large bowl. Top with remaining ingredients, dress and serve.

Jenna, you know how I love salad. We have a dinner salad usually once a week and I usually add chicken. I keep the frozen chicken pieces from TJ’s in the freezer, easy peasy. I love your above salads and I’m not a fan of eggs either. I do love to add bacon to spice it up. Yum…….thanks for the different ingredients suggestions.
