I am looking forward to lighter recipes as the weather warms
and some Easter treats and dishes
Easter will be different this year, no big family gatherings
But it is important to keep up traditions, and celebrate in your own home with something special
I know it can be challenging to get groceries right now,
so these recipes are flexible and pantry friendly
If the recipe calls for a cream soup, use any cream soup
If the recipe calls for ranch seasoning mix, substitute Italian or dry onion soup mix,
or make your own seasoning mix!
If the recipe calls for pastry, use pie crust dough, crescent roll dough, pizza dough or puff pastry,
even crushed crackers, chips or tortillas

Jenna, food is so comforting during these uncertain times. I can’t wait for the coconut cream pie cookie cups. I read a discussion yesterday about so many who do not like coconut. I couldn’t believe how many said they didn’t care for it. The hubby and I both love anything with coconut. The food all looks delicious and tempting. I have had to improvise on several dishes lately, and they have all turned out well. Happy Wednesday, it is beautiful in our neck of the woods.
Thank you Pam! Coconut is one of those foods that people either love or hate, but the coconut cream pie cookie cups sound good to me, plus in our new normal, making individual servings rather than a large pie, keeps things a little safer… Enjoy this bright sunny Wednesday!

Lots of great ideas here Jenna, the all sound so good. I was thinking of ordering a small Honey Baked Ham for our Easter as we could make a lot of meals off of it but everyone seems to be thinking the same thing and there aren’t any available even this early.
Oh dear, I hope you can find one. I love ham and the variety of things you can make with the leftovers!
