Party Panache, Spring Bird’s Nest Cake

A little creative cake baking today

When I wasn’t able to get the chocolate eggs

I wanted for this bird’s nest cake

I had to put my thinking cap on…

A simple chocolate bundt cake

With salted caramel drizzle

After 1 hour in the refrigerator, the caramel disappeared into the cake

A small overturned cup will support the eggs I’m going to put in the center

Brown sugar icing will secure the “nest”

The boys haven’t dyed eggs yet so I simply painted 3 with watercolor and gauche

A few dark splatters to make them look like robin’s eggs

A fresh crisp green lettuce leaf will hold the eggs

This nest base can be easily removed when it’s time to slice the cake

The nest is garnished with grated carrots and pretzel sticks

The brown sugar icing holds the pretzels in place

SPRING BIRD’S NEST CAKE

This is such a fun cake to make and serve for Spring and Easter
Prep Time 5 minutes
Cook Time 30 minutes
Decorating Time 20 minutes

Equipment

  • Bundt pan

Ingredients
  

  • 1 box chocolate cake mix {I used Betty Crocker Super Moist Triple Chocolate Fudge}
  • 1 cup buttermilk
  • 4 eggs
  • 4 Tablespoons butter melted
  • Salted Caramel dessert sauce

Brown Sugar Icing

  • 4 Tablespoons butter
  • 1/3 cup heavy cream
  • 1/2 cup brown sugar
  • 1 1/2 cups powdered sugar divided

Decorations

  • salted pretzel sticks
  • 3 colored eggs
  • lettuce leaf {I used part of a romaine leaf}
  • 1/2 cup grated carrots

Instructions
 

  • Combine cake mix with butter, buttermilk. Turn mixer on and mix, adding eggs one at a time and beat for 2 minutes.
  • Spray bundt pan evenly with cooking oil or baking spray. Pour batter into pan. Bake according to package directions, checking often near the end of baking time, do not over bake.
  • Let cake cool 10 minutes. Invert cake onto plate and poke all over with a bamboo skewer. Slowly pour caramel sauce over cake. Place cake in refrigerator for 1 hour.

Brown Sugar Icing

  • Make icing by melting butter in a small sauce pan over medium heat. Add cream and brown sugar. Stirring constantly bring mixture to a boil. Remove from heat and let icing cool for 10-15 minutes.
  • Place cooled icing into mixing bowl and add 1 cup powdered sugar. Beat until incorporated. Continue to add more powdered sugar to reach desired consistency. You want the icing to be thick enough to sit on cake and slightly drizzle down the sides.

Decorations

  • Place a small glass or container upside down in the cake center. Top cake with a fresh crisp lettuce leaf.
  • Place eggs on leaf. Place pretzel sticks on icing around lettuce leaf, and around eggs on leaf. Garnish “nest” with grated carrots.

    • The other day my son went on a grocery run and was able to buy asparagus, we were so excited! It’s funny how things we used to take for granted we now appreciate!!

  6. This cake is visually stunning…I wonder if you couldn’t caramelize the carrots lightly so they will keep longer. I know shredded carrots will shrivel pretty quickly…and maybe the pretzels too…so pretty, we usually have carrot cake for Easter. I don’t have the ingredients for it now…but, then I’m not having any company anyway! Have a Happy Hoppy Day, Sandi

    • Thanks Sandi! The decorations on this cake are really just for original presentation as the “nest” including the carrots is removed when serving and the pretzels get soft quickly. Sorry you can’t make your carrot cake this year!

I’d love to be serving this to the family this weekend, but all has been cancelled, and I’m so sad the 9 grands and their folks will not be coming over for our usual Easter dinner.
