May is full of so many celebrations and occasions…
We were planning to have a big Kentucky Derby party this year
but the Derby been postponed to September…
At least we can enjoy Southern recipes this month,
with pecans, bourbon, and perhaps bake a Kentucky Butter Cake…

The theme of the month was using what’s on hand for Creative Cooking!
Easy Glazed Lemon Rolls from Plain Chicken were my inspiration for my Lemon Rolls with Lemon Cream Cheese Filling, I doubled the filling and added vanilla, great for breakfast or dessert
Asian Spicy Sesame Cucumbers from Melanie’s Kitchen turned into Asian Sesame Cucumber Salad
Asparagus Gratin was adapted from Easy Asparagus Casserole from Funny Love
My son got creative making pasta and pizza and came up with these 2 incredible dishes
Everything But the Kitchen Sink Pasta and Easter Flatbread
Slow Cooker Smothered Pork Chops from Buns in My Oven became Slow Cooker Creamy Pork Chops

Instead of making Ham Casserole with Broccoli & Rice from The Cozy Kitchen I made my favorite Ham and Asparagus Casserole with Egg Noodles

I made my own version of a Spring Bird’s Nest Cake from what I had on hand, inspired by Easter Nest Cake from the Food Network
