I have shared this recipe before,
but its so perfect for summer meals and gatherings,
it’s worth sharing again…
Grapes are wonderful on their own of course
by the handful or perhaps a glass of wine
They are a delicious addition to salad
Even baked on a flatbread!
Figgy Bleu Focaccia with Grapes
AND this creamy grape salad is an old fashioned Southern summer favorite
I call it Lazy Day Grape Salad because it’s so easy to put together
It’s cool, sweet, creamy and a little crunchy with chopped pecans
You can serve it just the way it is…
Or on top of crisp greens
Prepare the salad in a plastic container with a lid
and tuck it in a cooler to take on a picnic or to a BBQ
You can make it ahead, it stays delicious for several days
I made a batch and enjoyed nibbling on it for lunch last week
Lazy Day Grape Salad
Ingredients
- 8 oz seedless green grapes
- 8 oz seedless red grapes
- 4 oz low fat sour cream
- 4 oz reduced fat cream cheese, softened
- 1/4 cup brown sugar
- 1/2 cup chopped roasted pecans
- 1 cup blueberries, optional
Instructions
- Combine cream cheese and sour cream in a mixing bowl
- Toss grapes around in cream cheese mixture to coat with dressing
- Place grapes in a shallow casserole dish and sprinkle with brown sugar and pecans
- Cover and refrigerate 4-24 hours before serving
- Store leftovers, covered, in the refrigerator for up to 4 days
