Recipe Box, BBQ Chicken & Ham Linguini

A make ahead casserole is my go to for busy days,

one that can be prepped early in the day, or even the day before,

and popped in the oven for an effortless dinner

One of my favorites is Blue Ribbon Chicken Gratin

so named because it’s worthy of a blue ribbon 🏅

Last week, I made a new version for the night my family arrived for the 4th

It is a combination of shredded slow cooker BBQ chicken,

diced ham and linguini noodles,

all baked in a creamy dreamy sauce

I had leftover slow cooker shredded BBQ chicken in my freezer

from our recent BBQ Chicken Tacos with Broccoli Pineapple Slaw

Cooking chicken in a slow cooker is such a great way to have it on hand

for tacos, casseroles, salads and wraps

Ranch Chicken Wrap with Asparagus and Bacon

For this baked linguini

Start by sauteing onions with butter and olive oil

Add ham and stir fry it to get some color on it

Next add chicken, cheese, chicken soup and cream

Stir until cheese melts and then add pasta

Transfer pasta mixture to a greased or sprayed casserole dish

Top with grated cheddar and Parmesan and bake

Let me say, this was a crowd pleaser!

Everyone went back for seconds and one guest had thirds!

Keep this in mind for when you want an easy satisfying do ahead meal!

BBQ Chicken & Ham Linguini Bake

Satisfying do ahead meal the whole family will love
Prep Time 15 minutes
Cook Time 45 minutes
Course Main Course

Servings 6

Ingredients
  

  • 4 cups shredded BBQ chicken see recipe below
  • 8 slices medium thick slices ham, chopped
  • 1/2 large sweet onion, chopped
  • 1 Tbsp unsalted butter
  • 1 Tbsp olive oil
  • 6 oz, linguini pasta noodles
  • 1 can Cream of Chicken soup
  • 8 oz. Velveeta cheese, cubed
  • 1 cup cream or half and half
  • salt & pepper
  • 2 oz. grated cheddar cheese
  • 2 oz. shaved Parmesan cheese

Slow Cooker BBQ Chicken

  • 2 large boneless, skinless chicken breasts
  • 2 cups BBQ sauce

Instructions
 

  • Bring large pot of salted water to a boil, add pasta and stir
  • Cover pot, turn off burner, and leave pot on burner while you prepare the rest of ingredients
  • Saute onion in butter and olive oil over medium heat until soft and golden
  • Add ham and stir fry until it begins to brown, then reduce heat to medium low
  • Add chicken to pan, then add soup, cream and Velveeta
  • Stir until cheese melts and sauce forms
  • Drain pasta and add it to skillet with meats and sauce, stirring to combine
  • Transfer mixture to deep greased baking dish, 8" x 8" or 2 quart
  • Top with cheddar and Parmesan and refrigerate until baking if desired
  • Bake at 350 degrees for 45-60 minutes until hot and bubbly

Slow Cooker BBQ Chicken

  • Place chicken breasts in a sprayed slow cooker and cover with BBQ sauce
  • Cook for 3-4. hours on high or 6-8 hours on lo
  • Shred chicken with 2 forks
  • Use chicken in sandwiches, salads or casseroles

  2. Looks good, Jenna. The broccoli/pineapple/grape salad was tasty. We didn’t have the honey mustard dressing or fresh pineapple or bacon but used small dices of ham (a fine sub) and canned pineapple (it was fine — probably not as lively as fresh, but OK). Because we didn’t have the dressing, we used a bit of the juice from the canned pineapple with the rice vinegar and it was really quite delish and a good substitute — very light!
