Take-out Tuesday, Fruity Flatbread, Savory or Sweet

One of the recipes on the July Recipe Bucket list is

Blackberry Ricotta Pizza with Basil from the Food Charlatan

I thought I had all the ingredients…

But when this one is around, fruit disappears fast!

There were only 2 blackberries left…

So a peach, a few strawberries and red grapes came to the rescue!

It has been hot and humid here,

just like so many places in the US in July…

This creamy fruit topped flatbread was a tasty lunch

for HHjr, Super Boy and Big E after their hot morning of fishing last Saturday

“What is that Gigi?” asked Super Boy

“We can eat that?!?!” exclaimed Big E

“Oh I thought that was something you were making for dinner,

looks great!” said HHjr…

It starts with a can of Pillsbury thin crust pizza dough

Unroll dough onto a well greased sheet pan and reshape,

pulling and stretching as needed, into a large rectangle

Prick dough all over with the tines of a fork

Bake at 400 for 8 minutes until it just turns golden

Spread with an even layer of ricotta cheese

then top with grated white cheddar

Add fruit pieces

Top with shaved Parmesan

Bake at 400 degrees for 10 minutes

or until crust is golden and cheese has melted

Cut into squares to serve

Top with crispy bacon, ham or cooked chicken to kick it up a notch!

If you want to make this a dessert pizza,

omit the white cheddar and Parmesan

and use white chocolate chips instead for a sweet treat

.

Fruity Flatbread

Sweet & Savory combo of fruit and cheese makes this an irresistible Summer nosh with added meat for a main dish or white chocolate chips for a dessert version

Cook Time 10 minutes

Servings 1 flatbread

Ingredients
  

  • 1 can Pillsbury thin pizza crust dough or use any pizza crust dough you prefer and adjust time accordingly
  • 1 cup ricotta cheese
  • sliced peaches, strawberries, grapes, or whole blackberries or blueberries use any combo or qunatity you like
  • 3 oz. Sharp White Cheddar, grated
  • 2 oz. shaved Parmesan cheese
  • crispy bacon, cooked chicken or ham optional

Instructions
 

  • Grease or spray a large rimmed baking sheet
    Unroll dough, stretching as necessary to form a full size rectangle
  • Prick dough all over with a fork
  • Bake at 400 degrees for 8 minutes, until just firm and starting to turn golden
  • Spread ricotta over partially baked crust in an even layer
  • Top with grated white cheddar
  • Place fruit evenly all over top of pizza
  • Add meat if desired
  • Sprinkle with shaved Parmesan cheese
  • Refrigerate for baking later if desired
  • Bake at 400 degrees for 10 minutes or until heated through, crust is golden and cheese has melted

Notes

To make a dessert version, eliminate the cheeses and sprinkle ricotta with white chocolate chips instead

  2. Jenna, I know your guys enjoyed the flatbread. I would love the savory or sweet version of your recipe, it looks delicious. The heat and humidity have almost been unbearable over the past 4 or 5 days, I am staying indoors. Happy Tuesday!

  10. Jenna this looks amazing! What a great idea to use ricotta with the fruit! My grandson LOVES fruit and will eat that over everything else so he will love this and the fact that it is a pizza…his other great love 🙂
