Recipe Box, Dinner on the Grill

He is constantly creative with our dinners and the grill is usually involved
.

When he came home with chicken and pineapple
and mentioned kebabs,
I assumed he was going to cut the pineapple into chunks
and skewer it along with the chicken…
.

Silly me!
.

.
He cut the skin off and rolled the pineapple in brown sugar and drizzled it with honey
.

.
Instead of putting a variety of all the ingredients on each skewer, he skewered the vegetables and chicken separately
It’s easier to make sure each component is cooked properly this way
He threaded sweet yellow pepper, mushrooms, and onion pieces onto skewers, then made skewers of squash
He cut a large baking potato in half, then sliced it horizontally into planks

Everything was brushed with olive oil and seasoned with salt & pepper
.

The chicken was marinated in a bottled teriyaki sauce for several hours then placed onto more skewers
.
On to the grill!
He put the pineapple on first on medium high heat setting on the left,
After 20-30 minutes added the chicken and vegetables
and adjusted the right side of the grill to medium heat
.

Initially he kept the potato slices together
and placed the halves cut side down on the grill
.

.
Later when he turned them they were separated into planks until cooked through
.

.
When everything was done he sliced the pineapple for serving
.

A complete meal straight from the grill!
No heat or mess in the kitchen!
.

The grilled fries were very tasty!

Dinner on the Grill
Equipment
- grill
Ingredients
- 6-8 boneless skinless chicken breasts
- 2 cups teriyaki marinade {bottled or make your own}
- 1 fresh pineapple
- 1 sweet yellow pepper {or red or green} cut into 1″ pieces
- 1/2 large sweet onion cut into pieces
- large white or Baby Bella mushrooms cleaned and thickly sliced
- 1 large yellow squash cut into 1/2 inch slices
- 1 large zucchini cut into 1/2 inch slices
- 1 large baking potato
- olive oil
- salt & pepper
- brown sugar
- cinnamon
- honey
Instructions
- Skewer squash pieces, alternating yellow and zucchini pieces.
- Skewer mushrooms with onion and yellow peppers.
- Place each chicken breast on a smaller wooden skewer.
- Cut potato in half horizontally. Place halves cut side down on cutting board and slice vertically into thick planks. Keeping halves in tack, hold potato halves together and put them on a pan with the other skewers.
- Brush potatoes and vegetables with olive oil and season with salt and pepper.
- Remove skin from pineapple, leaving top on, Rub pineapple all over with brown sugar. Sprinkle with cinnamon and drizzle with honey. Put pineapple on the grill first, off to one side and cook for 15-20 minutes on medium high, turning occasionally.
- Turn heat to medium. Place everything on the grill, with the potato halves together, cut side down. Half way through grilling, turn potatoes and separate planks, putting them individually on grill grate. Grilling time will depend on type of grill, grill heat, and thickness of foods, so adjust accordingly, checking for doneness with a thermometer or probe.
- Turn pineapple occasionally using the top as a “handle.”
- Cut pineapple into slices to serve

That’s SUCH a good idea about cooking the veggies on individual skewers so they are timed right instead of with the meat and all. I don’t know why I didn’t think of that!
