Recipe Box, Mongolian Beef with Vegetable Fried Rice

I apologize for the Take-out Tuesday being MIA

the last 2 weeks because of several special group posts,

that fell on the past 2 Tuesdays…

but hopefully today’s post will inspire you to try

a favorite Asian recipe at home!

HHjr has made this Mongolian Beef twice recently

and both times we both couldn’t believe how good it was,

and it’s so simple to prepare!

Cut the flank steak on the bias* into 1/2″ strips

Place it in a large ziplock bag with cornstarch

and shake well to coat meat on all sides

*cutting it on the diagonal ensures tenderness

The sauce is made with things you probably have in your pantry:

soy sauce, garlic, brown sugar, ginger, and red pepper flakes

Cook rice according to package directions

and dice a rainbow of vegetables

plus green onions

He used asparagus, red onion, yellow squash,

red peppers and sliced almonds

The green onions are in a separate bowl to garnish the beef later

Now the fun begins!

My son will use any excuse to use one of his many grills

and this griddle is his new passion

He put the cornstarch coated beef strips

on the oiled medium high griddle

and drizzled them with a little olive or grapeseed oil

You can also do this on the stove top

The beef cooks quickly, so keep and eye on it

and remove it from heat as soon as it’s done

Next he put the vegetables on the griddle with a drizzle of oil

and quickly stir fried them

If the vegetables are cut into small pieces they take no time to cook

Big E showed up and insisted on being his sous chef

They put the cooked rice on the griddle* for a quick browning

then combined it with the vegetables

*you can also stir fry the vegetables and rice in a skillet

To finish the meat,

add the sauce to the meat in a skillet and heat over medium heat

Add green onions and cook until sauce thickens and coats meat

Serve the beef over or along side the vegetable stir fried rice

Mongolian Beef and Vegetable Stir Fried Rice

Make an Asian favorite at home with just a few simple ingredients!

Ingredients
  

  • 1 1/2 lbs flank steak
  • 6 cups cooked rice
  • 3 cups diced vegetables
  • 4 green onions, chopped
  • 3 cloves garlic
  • 1/2 cup brown sugar
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 2 tsp freshly grated ginger
  • 1/2 cup cornstarch
  • red pepper flakes, optional
  • sliced almonds, or cashews, optional

Instructions
 

  • Combine soy sauce, water, brown sugar, ginger, garlic and red pepper. Set aside
  • Cut flank steak on an angle {on the bias or diagonal} and place in a large ziplock bag
  • Add cornstarch a little at a time, seal and shake bag until meat is coated. {You might not need all the cornstarch, just use enough to lightly coat the meat on all sides}
  • Preheat griddle or skillet to medium high.
  • Add cornstarch coated meat to skillet and cook quickly browning all sides, and cook until meat is desired doneness. Time will vary according to stove, grill, and type of skillet or griddle used, so watch carefully and test for doneness with a meat thermometer or knife
  • Lower heat to medium, and add sauce to meat and add green onions. Cook and stir several minutes until sauce thickens and covers meat. Keep warm.
  • In another skillet, cook vegetables in a touch of oil over medium high heat, stirring, until done. Add rice and continue to stir fry until rice begins to crisp or brown. Remove from heat and garnish with sliced almonds if desired.
  • Serve meat along side or on top of vegetable fried rice
  • Season as desired

Notes

An easy and delicious meal, much better than take-out!

  1. Jenna, HHjr is quite the chef and Big E is the cutes sous chef ever. This dish looks fabulous and doesn’t sound difficult or time consuming. Kudos to your amazing Chef! Happy Wednesday!

    • He really spoils us, Labor Day weekend he cooked dinner for 17 people every night! I love that Big E is interested in cooking, he has cooked bacon and pancakes on the outdoor griddle all by himself!

  3. What a treat to have a grill master in your midst. You showed me what I’ve been doing wrong with this dish (and your sauce recipe looks better). I’ve been adding the sauce while cooking – too early and it made everything mushy. Thanks for the lesson. If I need more help, I’m calling your son.

    This looks delicious. I’ve never seen a griddle grill. Is this an attachment to a regular grill or a completely separate grill. Either way, you’ve inspired me to use our griddle on the grill outside more often. Quite the cute little sous chef there!!

    • The griddle is a separate grill, but you can also get a griddle to set on the grill you have. He bought this for himself for his birthday and uses it all the time, it makes killer hamburgers! Thanks Kim~

    Love that Big E is interested in cooking! Both my boys loved helping in the kitchen when they were young and are fabulous cooks because of it.
